I do the same but add 1/2 tsp of baking soda dissolved in tbsp of water to the marinade. It helps to get that velvet effect on the mince and breakdown any tough bits.

Yum! They mix this mince with a beaten egg and cooking up then putting it onto a long sub style roll. It’s called Roti John.
