Singh's ROTI SHOP & Bar (in the kitchen) | Queens, New York

Today I am at Singh's Roti Shop to see what goes on behind-the-scenes on a busy Friday evening.
As a foodie, it was a lovely experience to witness all the hardworking cooks doing their daily routine. There were different stations for each type of food. There was a doubles station- the bara was being fried on one side, and the channa was being cooked on the other. Curried meats were being cooked by Sunita, and the West Indian Chinese food cook, Damian, was busy preparing the specials for that night.
In the video, you'll also see there's a roti station. Can I just stay there all day?! It was so therapeutic to watch the ladies as they skillfully made their roti- buss-up-shot/paratha, sada roti and dhalpuri. They also got an order for pepper roti but I didn't want to stay long to get in their way.
Overall, it was amazing to witness everyone working together as a team!

When I lived there I ate at that restaurant all the time. This family owns another restaurant in Orlando, Florida and now that I live down here I eat at that place too. Love sip dhal in a cup and always ask to give me the hot pepper. I’m Puerto Rican and my husband is Trinidadian and we love mixing food from both our cultures.

I remember the first time i went there with a old friend about 4 yrs ago it was a Saturday and the line was out the door. It was the first time i ever had roti and curry goat...I was in love...lol I no longer eat meat and I've been meaning to go back to the veggie castle thats across the street so when i do I'll go into this restaurant and see if they have any vegetarian options
