I love pasta salads during the hot summertime. It's a great alternative to a full meal. Jim- Thanks for including how long your recipes will stay in the refrigerator. Pasta salads came about by using whatever leftovers were available, made during the warm months of the year and avoiding having to crank up the stove to eat well. They evolved into their own category of dishes and are a staple of buffets, picnics, barbecues, etc. during spring and summer. You can riff endlessly on the combinations of ingredients - your only limit is your imagination. Great post as usual! Mangia!

I just made the first salad and it’s marinating in the fridge for tomorrow. I added mushrooms and peppers to mine and used mozzarella pearls. Really easy to put together!!

As soon as I saw the spinach and Gorgonzola salad I knew I had to make it. It’s chilling in the fridge now for a later lunch but I already know it’s fantastic! I hobbled around on a broken foot to put it together! You’re right about buying crumbled Gorgonzola though. We didn’t and what a job that was. Thanks for the great recipe. Hi, 2 great pastasallads! The salami is great in itself and for the gorgonzola I add a little thinsliced celery, diced firm pear (or halved grapes) and a lot of walnuts for a superdelicious lunch or side dish to chicken or salmon.

I have used the diamond kosher and I put it in a salt grinder. I extremely prefer kosher as I h found I use less than the regular table salt. I have also noticed that the kosher seems to enhance the flavor of the food much better without overwhelming the ingredients.

I'd recommend that after dicing the salami, heat up the diced pieces in a really hot pan (no oil needed) with the goal of getting some browning on those pieces. 100% improvement in 5 minutes.

These both look fabulous. I owned a catering company and we made an almost identical spinach/pasta salad, using Roquefort cheese and the addition of oven-roasted walnuts. It was always the first thing on the buffet we had to replenish. Good job! Can't wait to try the other salad with salami. And I'm a new subscriber!

I just made the fusilli salad and it’s very good. I added a little sugar because I found it a little too vinegary. It’s very easy and will make a great side dish with some grilled tritip! Next time, I’m going to toss in a bag of arugula and try it. Thank you for the recipe!

This looks great. A tip: When making a vinaigrette dressing, to add a little extra stability and body to it, add a little xanthan gum and blend it in with the immersion blender. Start with a sprinkle of maybe 1/8 tsp, blend, check, and go from there. The stuff is pretty potent so try not to use too much. But it definitely elevates the dressing!

Gorgonzola and spinach is a marriage made in heaven. It might be even better with some toasted pine nuts/pinolis. It would an interesting crunch as well as a piney note.

I made the Spinach Pasta, it was very tasty, one Family member didn't like the Gorgonzola but loved the Dressing, I loved the Gorgonzola, it added a nice dimension to this, I also added about 3 big spoonful of cold Peas that were left over from dinner the night before...those were a nice flavor enhancer too.

Made the spinach/Gorgonzola one. Really, really good. The entire half pound of Gorgonzola cheese is not too much. Love the vinaigrette. Next time I’ll add 2 teaspoons of red pepper flakes, and 3 tablespoons of oregano, as I like spicy, robust flavors. Anyway, great recipe..thanks!

Both of these looked outstanding- but I made the spinach/gorgonzola one first. I was thinking- "Mannn, this would be good with some toasted pine nuts", but since I didn't have those, I did find some chopped walnuts in the depths of my fridge, so tossed those in- and the crunch they added was awesome! Was REEEEEALLLLLY good with a a glass of Prosecco on this hot day we are having! Thanks for sharing all of your wonderful recipes with us - you ROCK!! 👄

Never had Gorgonzola until I was in Italy last month. I had it in a cannelloni with ricotta. It was very good which says a lot since I am not a bleu cheese fan. I’d love to see some recipes using it.
