@@katherineharra8434 Yeah, a lot actually. But in a very danish way. We boil and strain our pasta and put it back in the pot with a lid on it. And then at dinner table, each person takes whatever amount of pasta they want and put sauce on top. 2 things happen. The pasta becomes clumby and the sauce is watery. Not pleasant. I dont do it anymore, and this is in large parts due to KZbin cooking videos :).

Im Danish aswell and my fav pasta dish is Cacio e pepe with 50/50 parma, pecorino no cream just the pasta water and hard cheese emulsion with the startch and some butter. Pasta is not just an Italian thing, cooking is universal and something everyone can learn if they want. This dish looks comfy and hygge , very autmn october dish with the shrooms, maybe some pancetta for more taste in terms of meats.

I made this tonight from the written recipe, which is just a touch different from the video but close enough. I used whole plum tomatoes and crushed them by hand, that way you get bits of tomato which gives the dish a little more texture. Didn't need any pasta water - it was perfect. This recipe tasted like the pasta dishes we had traveling through the hills of Tuscany where everyone cooks with rosemary. Really wonderful!!

I just made this recipe and it’s hands down one of the best pasta dishes I’ve had in a long time! Didn’t have any white wine so I substituted with Rosé. I was sceptical about the rosemary because I don’t often cook with it, but it works well with this dish

I love this channel because it keeps things simple and relatable. I visited Italy a few years ago for the first time and tried to eat and try out as much of the local flavours as I could, stuff that I’d never see at home. There were two dishes that were simply unforgettable, ravioli stuffed with pumpkin and squid-ink pasta that I had in Venice. I wish I knew how to recreate those dishes 🤤🤤

I’ve only recently come across your channel but there are several things that I feel the need to comment on: 1. LOVE the way that you are teaching your son how to taste & appreciate food, identify ingredients & understand what he likes about what he’s eating 2. Your easygoing manner whilst demonstrating the recipes - it’s not condescending, thereby engaging with your viewers (regardless of their culinary proficiency) 3. Your obvious love of the recipes, ingredients, how food should make the eater feel, why you do certain things (e.g. adding a little salt to the veggies whilst frying, to draw out their water, to enhance their flavours) - it’s all so brilliantly engaging I look forward to watching your back catalogue to see what new recipes I can find👍🏼

I made this today. It was a huge hit with my three friends. All of us have had the good fortune to spend a bit of time in Italy. I used paccheri which captured some of the sausage with each bite. I forgot to toss in the parsley I had chopped, but nobody knew it was supposed to be added. Some pepperoncini gave a nice little heat. I very much enjoy your channel.

You know what's great about this meal: customization and simplicity. I made something similar just with some left-overs. Use ground beef instead of sausage. I like my sauce thick so I didn't use any pasta water. Super simple that even a very mediocre cook like myself can make it!

I made this for my wife for a special occasion, but I used hot Italian sausage; pecorino romano; pinot grigio; a blend of crimini, shiitake, and oyster mushrooms; and homemade pasta (kind of a cross between orecchiette and cavatelli ); served up with a really nice dry red. I'm not much on measuring things, so I generally just wing it with the relative amounts of each ingredient. We really enjoyed it! The ingredients mesh together nicely, there's no flavor that's too far out in front of the others -- in all, a wonderful dish. You really hit it out of the park on this one!

I’ve lost count of how many times your videos have led to delicious dinners, but man oh man this was so good! That rosemary! We found the same dried mushrooms at Costco … I can see getting a lot of use out of those. In general, being based in CT, I really appreciate your videos since I can usually find the exact products. Growing up in an Italian family and my uncle had a restaurant once I became an adult I kinda went my own way as a cook and moved away from my roots because it’s what I ate EVERY DAY and I got sick of it. This is our new favorite winter/ fall pasta dish! I’m always looking for hearty pasta dishes for my wife (who loves pasta, but refrains from eating meat). I eliminated the sausage, but added black truffles and some of the truffle oil and used the soaking liquid from the porcini mushrooms to extend the sauce instead of plain pasta water (which I HIGHLY recommend). ABSOLUTELY FANTASTIC!!!!!

Delicious...I made a few changes with the ingredients I had on hand. First I subbed dried Shitake for Porcini. I used fresh Sage in place on Rosemary, Used Brandy instead of wine, used tomato paste and diced tomatoes, instead of crushed....and Pecorino for Parmesan. I think what gave it that extra kick was that the diced tomatoes were fire roasted.

Man, that looks good. I can even imagine the flavour. I don't think you've gotten too complicated. One of the first things anyone has to know as a cook is the mise-en-place. Otherwise known as having everything prepped and ready to add when it's time to get the ingredients in there without making a panic, a mess and a failure of a dish in your kitchen. Pro or amateur, the mise-en-place is fundamental to good cookery. Cheers!

I get lazy about pre-pouring the liquids but I always have my other ingredients prepped, & I lay them out in order of how I'm using them. Mise-en-place makes cooking so much less stressful.

I am Korean-Australian who currently lives in Japan and its surprising how few people here understand pasta besides 3-4 sauces (shoyu/soy sauce and butter, aglio e olio, bolognese and ebi cream. I lived in a very Italian dominated area, mainly northern Tuscans so boscaiola has always been my favourite food since I was very young.

I made a riff on the mushroom pasta a few weeks back, which turns out to be quite similar to this. Same basic premise as the creamy mushroom dish, but adding in some wild mushrooms, subbing sausage for game meat (moose and wild boar) and game stock. Was absolutely amazing, fresh rosemary/thyme + game and all those foresty flavors are just to die for.

Another fall cooking experience up at the cabin. Appropriate… chopping wood all day! Underestimated the volume so had to transfer from pan to Dutch oven. I feel like i'm hanging with your family when I watch these. It's one of my favorite things to do for my friends, too - me cooking while they chat and taste test - so I really love that I get to feel the flip side. Genuinely lovely video. Thank you for the yummy recipe too!

Firstly, Thanks for continuing to make these videos. I've added quite a few to my list to try to make at some point when my school semester ends and I have free time. I love the variety of pasta dishes you put on this channel and the sort of "laid-back home chef" vibe that comes through from the music. Cooking should first be delicious, and as a close second FUN (because clean-up sucks). Secondly, It occurred to me as I ate dinner while watching this video, that there's not alot of dishes involving sea food which struck me as odd but understandable, given the price of seafood these days. I hope you and Mama and James keep making vids, they're entertaining and the food looks so mouthwatering good on the camera. Thanks again!

#1 LOVE your family ... a joy to see the taste testing and how everyone cares for each other ... I know it is KZbin but I think your hearts shine through. #2 The recipes and methods: prepping ingredients at the start ... for me, this allows me to see quickly if I have what I need to make the dish. #3 Easy to follow methods. I am an experienced cook and baker but still ... just the right amount of detail for a new OR experienced cook. I'm new to the channel but I have made the lemon-chicken-orzo soup and the pepper beef stew: loved both. I agree that this would be a great baked dish as well. For the sausage. Not too long ago on a goofy TikTok I saw someone using a tool that looks kind of like the back of a jet. I bought one: OXO ground meat chopper. Game changer for bulk sausage, ground chicken or turkey. The OXO is silicone so ok for non-stick as well. Finally, thanks for the heads up for ButcherBox! I took a look and signed up.

I love how at the end the sausage was a slight miss with the fam. Sometimes in cooking these things happen and there really isn't much you can do about it after the fact. I'm glad you kept that in the video because it's super relatable.
