An easy (and slow) way to beat sisyphus is just spamming screw, chainsaw, and parrying a lot, this will make you almost always be full health, and along some good parrying skills, your stamina, will also always be full allowing you to dodge unparriable attacks, atleast thats what i do to beat brutal sisy (im bad at the game[my english sucks im sorry])
