vegetarians/meat eaters is not really a thing in indonesia, so tofu is seen like a typical side dish more than anything.for example fried tofu most commonly goes with fried animal protein like chicken, duck or fish and sambal. mostly because we were taught in school a concept called "makanan 4 sehat 5 sempurna" or literally means"4 healthy 5 perfect meal" 4 healthy consists of carbs (primarily rice), protein, vegetables, and fruit, add milk to make it 5 perfect.

In Indonesia, we often mix various kinds of food with tofu. For example, my family combines tofu and eggs to make "telur dadar" (omelette). When it comes to fritters, the most popular tofu fritter in Indonesia is "Tahu Isi." First, you lightly fry the tofu until it turns light brown, then you hollow it out and fill it with various fillings. Finally, you dip the tofu in batter and fry it once again

I am not surprised about the tofu pie. Back in the 90s, my grandmother was told she needed to eat better and so she incorporated things like tofu into her diet. And one of those dishes was a tofu cheesecake which to this day I prefer over many cheesecakes. The lady was right when saying tofu is a blank slate -- it's not that flavorful on its own so it really just tastes with whatever you put with it.

@@alexandrabozzo3746 I would if I could, unfortunately I never got it from her when I had the chance. However, I do remember that it wasn't a complicated recipe -- some of those available online include things like cashews for example. There is a tofu cheesecake on the allrecipes website that I would assume is similar to the one she made. I don't think it was so complicated because tofu already has a similar density to cheesecake, so it doesn't take much beyond merely giving it the right flavor. But for me, what set hers apart was the raspberry sauce she served with it. So hopefully that helps send you in the right direction.

You stuff pork mince inside half-fried firm tofu and cook them with crushed tomato (previous sauteed with finely chopped garlic) in a pot. Your piece of tofu should be smaller than palm size. Seasoned with fish sauce and garnished with chopped spring onion. Served hot with rice. When having this dish in a meal we (or at least my family) usually pair it with 1 type of boiled veggies and/or pickle to balance the oil. Rice is not my favourite carb but everytime we make this I can easily devour a big bowl of rice 🤤

for a vegan sundubu jjigae (and many other vegan broth bases for east asian soups) i recommend making some dashi, like for miso soup, using a piece of kelp (kombu) and 1-2 dried shiitake. Just have them rehydrate in the water, gently bring it to a simmer, proceed with making your jjigae and take out the kombu at the end. for some extra flavor you might also add stuff like roasted onion, carrot, and daikon to the broth. i love mushrooms and like my sundubu jjigae with shimeji, enoki, and maybe fresh shiitake or simply button mushrooms :) though my partner gets overwhelmed by all the textures, so be warned if that's sth you tend to struggle with. (credit goes to gia choi for her wonderful korean recipes, and made with lau for the extra veggies :))

I grew up eating all kinds of different tofu, but my favorite dish uses what the internet is calling "tofu puffs". It's just deep-fried tofu, and I had it as an after-school snack growing up in Singapore/Malaysia. My mother would prepare it, and we'd just dip it in chili garlic sauce. So simple and so tasty. My favorite dessert version is very similar to the Vietnamese dish: Tau fu fah. It uses the silken smooth tofu and can be made with the sweet ginger syrup or gula melaka syrup. When I was little, there used to be a guy who'd come round the HDB flats and sell this from his motorbike. I live in Germany and I'm SUPER homesick after talking about this.

Or pour the chocolate mousse as a separate layer over a berry pie. Bake the crust separately (to keep it more crispy, less soggy), cook up the berries with some chopped apples (so the pectin will help them to "set"), cool the berries and fill the crust about two-thirds of the way up, then make the chocolate tofu mousse and use it to fill up the rest of the crust and top it off like chocolate whipped cream.

In Asia, tofu is used in all kinds of dishes-like Chinese mapo tofu (simmered tofu with ground pork), Japanese niku dofu (braised tofu with beef), and Indonesian krengsengan tahu (stewed liver, gizzard, and tofu). It’s wild how one part of the world embraces tofu’s versatility, while another views it through a narrow lens, almost like it's part of some dietary "propaganda." Like how _martabak tahu_ is such a simple dish for us Indonesians so it’s surprising for us how “out of the box” it seems to Westerners.

I would love to see a low-carb episode! I'm good at adapting recipes (lupini flour is my new best friend in the kitchen), but it would be so nice to see what people all over the world do with this topic.

Also, when making soontofu stew, I would use the Korean brand because it tastes better and also, most Koreans use dashi base and water instead. I would definitely recommend eating it with rice as it tastes way better. You can use any meat and veggies for it

So we use this tofu pie recipe, leave the sugar and pie crust out, put it in small ramekins like Beryl suggested in the video and it’s so quick and delicious! It really doesn’t even need the sugar. I’ve made it as a pie and my father refused to believe it didn’t have dairy in it, but still loved it so much.

I need to try the chocolate tofu pie! I've done something similar to this, but use a box of strawberry jello instead of chocolate

I do the tofu chocolate and I put cerials through it at the end, rice crispies style, or corn flakes, super simple

I have been in a cooking rut as well as not at all interested in meat currently. Or cookong in general. Probably the heat. You have given me lunch, dinner and dessert for the next month. I selfishly hope for a second video on tofu.

Hi Beryl, hope you see this. I'm from Vietnam, and we have one ingredient which is coconut milk to it. Some time we put tapioca boba on it to have more texture, but it not the type in boba milk.

Tofu cooked well is a joy! As someone who does eat animal products but loves tofu, I wonder how much of the Western perspective that tofu is somehow second best, the thing you eat when you can't have meat, relates back to colonialism? The European diet often frames meat as the ultimate centrepiece of a meal, as the ideal. Yet within cultures and countries where tofu is a staple ingredient, it's seen as one of a range of protein sources. I don't think it helps that it isn't something you can just treat like meat. You have to prepare, season, and cook it in a different way to bring out its best side. There is lots of information available on this now but for a long time that wasn't the case. There are lot of us who have cooked and eaten lacklustre tofu because it wasn't cooked well.

Yea as a SE Asian Chinese person, it’s kinda crazy that they would say it is Vietnamese when it’s a Cantonese desert that was brought to Vietnam…

Heat the spoon first by dipping it in hot water before spooning the whipped cream and you'll get that smooth scoop you're looking for Beryl.

You should do a black sesame episode. I had a black sesame iced latte like 6 months ago and I think about it every day! Lol. I want to figure out what to cook with it and use it in EVERYTHING.

Thank you for the clip. Everything looks tasty. As a Japanese, it's great to know that there are a lot of Tofu recipes around the world. I've never seen "Itokoyaku" dish in Japan. I guess it's maybe her household food (I'm not saying it's not a Japanese dish, though). "Itokonnyaku (Itokoyaku in this video)" is actually another name of "Shirataki (noodles)". "Shirataki" is usually made of "Konnyaku" which is made of a kind of potato.

13:48 speaking of perfect little pocket, Indonesian have many dishes where you put stuff into tofu. Tofu we had here is firmer so you can cut it into triangles and stuff with something. The most common one is Tahu Goreng / Tahu isi (stuffed fried tofu). You cut carrots & cabbages into smaller size and add beansprout, stir fry it with shallot + garlic + candlenut paste. Cool the stuffing and make the batter using plain flour & water. Cut firm tofu into triangle and slit the tofu to add the stuffing, put it in a batter and fried. We eat it with saus sambal (sweet & spicy sauce) or birds eye chili. 2. Tahu walik (inside-out tofu); for this one you need to cut the tofu into triangle shape and fried it first. After cooling down you slit the tofu and turn it inside out, stuff it with tapioca flour batter and fried until crispy. 3. Siomay Tahu; the stuffing for this include fish paste and tapioca flour. You can steam it or fried it and then eat this with peanut sauce. Beside this 3 there's also other tofu recipe in Indonesia. Or tofu as one of the ingredients for the dish since we consider tofu as main dish & snack.
