Man, sisig is my favorite beer companion. Great job! If you're looking to lessen the cartilage and get a more even texture for your bite, you can mix in some pork belly and pork cheek! Actually, you can swap out the meat with anything you want if you're feeling adventurous. Chicken shreds, tuna flakes, milkfish, straight up pork belly, and then maybe pick a favorite. Haha.

use a mix of ears, cheeks and pork belly. Same process, boil and fry or oven. Chop em up to little pcs. Use less ginger and use more onion. Also put chicken liver, boil and pan fry it and put it in a processor along with mayonaise and oyster sauce + the acid of your choice. Lemon/lime.. calamansi if available. half of your onions saute and half add it close to plating.

Hi. Nice video. Can you make another video of making sisig. This time with the correct recipe. You will add Grilled or fried chicken liver to sisig, not too fried. Mash the fried or grilled chicken liver (like mashed potato), add some vinegar, Calamansi (not lemon), salt and ground pepper, a little of sugar. Mixed it with the pork. Add some onions and red pepper. Do not add Ginger. Cook it again in your cast iron pan. There you have it. Also buy pig's face aside from pig's ear. Thank you!

Two things that you missed in this sisig recipe of yours are the soy and vinegar combi (not much, just throw in a couple of tablespoon of both while you have it sizzling in a pan)...that sisig must have tasted so linear with just salt and pepper. Hehe...

J-Mac's Amateur Kitchen well, the thing is, the Philippines has sooo many different variations of a lot of their foods. So I really just want you to experience the one with more “meat” instead of texture. Please try Chicken and Pork Adobo also!!! You’ll love it. Plus get Lumpia.

Why don't you try Pork/Seafood sinigang. It gives an amazing taste of pork belly with a sour broth that removes the fattiness of it, with a help of veggies to help, even though it's oily but the sourness will reduce it. Ingredients: Half pound of pork belly 3 Small Radishes Half handful of stringbeans 5 winged beans 3 ounces of pork broth 1 tamarind for sourness Hint of onion and garlic Some Kangkong I don't know what is it, just search it and you may find it. 1 bird's eye chili 2 small tomato for color

Mayo is a toppings for sisig..dont cook it with the pig..you need a chicharon too for additional toppings..and just mix it with the lime and egg before you eat it..
