Harry, when chopping or mincing large amounts of garlic, you can take a tip from Chinese chefs using a cleaver..press and slide knife over the mound of garlic, smushing it to the board, it adheres to the board and is easier to chop and helps it release its oils. Those guys can do a mound in like seconds that way.. I’m enjoying seeing your subscriber numbers go up every day..! Congrats..!

Love Beef Plate Ribs my all time favorite BBQ meat. We do them Texas style S&P Mesquite or post oak for wood but I will have to try a rack your way never used most of those ingredients before so trying something new is a good thing. Thanks to you and Mr. Beans for spreading BBQ Love!

Harry I'm Mexican and my wife sell Elotes and raspados During the week and parties so tajín and Chamoy are staples in my house. I really love it on my pork (Adobada) and Rotisserie chicken.

David Tran did not invent sriracha, he's simply popularized it in the United States. It's originally a Thai hot sauce.

Yes, he used his own recipe from chilies from a San Bernardino chili farm that give his sauce a unique flavor. Unfortunately, he has run into a whole host of business challenges with his factory in Irwindale (great to visit for Chili heads) and his chili supplier. I think his current chili blend has lost its unique flavor compared to what it was previously.

The problem is finding the whole plate of short ribs where I live, Sam's sells the short ribs in cross-section strips for mainly Korean barbecue. Can you do anything on the grill with Sam's Korean short ribs?

Harry, how do you determine if you NEED to wrap (i.e. if the meat looks like it will dry out before getting tender). I know this comes with experience but do you have any helpful tips? Thanks 😊

Your meat will never truly dry out by being naked. The only thing that could happen is that the crust could get too hard, which most people like anyways. I do think that wrapping your meat will always result in it being juicier so if you are working with low-quality meat like Select types then I would always wrap those. Edit: technically the only way your meat would dry out is if it were cooked too long or if it's low quality (little to no intermuscular fat to keep it moist) as mentioned before.

Great vid Harry! I love any beef ribs, but sometimes the ribs have a nasty dark vein of fat in them, especially in beef back ribs. I always cook to butter probe tender but have been doing hot and fast cook’s lately. Is their Anything to do about the vein? Do you think it’s not rendering down long enough? Thanks!

Back ribs are iffy sometimes but short ribs are consistently good. I find Choice very consistent. Also you need to pick the right racks and I go through the whole pile to pick out the thickest meaty ones

Hi Harry, Something I add to my beef. Sounds crazy but I take an organic pear .. peel the skin and the stem then squeeze the juice out and rub in with my spices . Taste great with pork chops too. Any thoughts.? Thank you
