Byron- saw this and had to make it for dinner tonight. Just ate it and it was so yummy, so thanks! I added and changed a few things that I think really made a difference. For instance, I used jalapeño ketchup, cooked my meat with red pepper flakes, used pepper jack cheese and a sourdough bun. Just a little twist.

Hey, why do you use Tomato Puree, Tomato Paste, and Ketchup? I know Puree means it's blended up tomatoes, not entirely sure what the paste is, but ketchup is made from tomatoes with some additional flavors, right? So why the need for all 3 of the tomato...stuff?

It tastes like different dimesions of tomatoes. I love using tomato paste: gives more concentrated depth to any dish. Yum!

The tomato puree is basically the liquid part of the sauce while the tomato paste helps to thicken things up and add more richness. (It's just a more concentrated kind of tomato sauce.) The ketchup is used as a seasoning because it's a little bit sweet and sour with other spices added. Using all three helps to balance out the flavor and consistency of the sauce.

Yeah, you must use a heat resistant spatula. Otherwise, the non heat resistant ones will melt and burn from the heat. (From personal experience) :)

Heat resistant for sure, so be sure to check if it is before cooking with it. I've made that mistake while making a very very large batch of caramel at a restaurant and it was a DISASTER. ;)
