Technically a steak or any other protein (aside from certain lean fish) should always have rest time after its taken out of an oven for at least 3-5 minutes. So the steak should still be warm/hot in the middle, but not enough to burn your mouth. Resting allows the juice to "rest" back into the steak evenly from top to bottom. Hope this helps! i suggest to everyone to wash or clean their knife after using those knife sharpeners. the way the sharpener works is that it chips off microscopic fragment of the knife to make it sharp again, so those fragments will either fall on the cutting board on still on your knife

jotiette most kitchen knives are made of carbon reinforced steel or stainless steel, I don't think iron knives exist anymore 😂

B' D Thanks for pointing out basic chemistry. But irrelevant to the topic. So how are we gonna "get our iron intake"? unless you're telling me that your body can separate and absorb iron from the alloy into your blood stream, not to mention the many other elements forged into the steel to enhance it's durability. If so, kudos to your body, either it is as hot as a blast furnace or you've just made a new scientific breakthrough 👌🏻

im really skeptical as to how this steak can survive a sear on one side for 5 minutes and THEN 10 minutes in a 500 degree oven and still come out medium rare..

+Nick Jim The oven actually cooks it more gently as compared to the raging hot pan, The oven is really just to cook the inside of the steak to the correct internal temp. Also the steaks did look fairly thick, 5-10 minutes is actually quite a perfect timing.

flat iron steak is my favorite cut! I love that it doesn't ever really have huge chunks of fat to cut off or around. It's inexpensive and you get a lot of edible meat for your money - but most of all it tastes amazing! it's evenly marbled so it had the flavor from the fat just not too much of it. YUM

Actually I learned just this week in calc 2, the rate of which an object heats or freezes is directly proportional to the difference of the temperature of its surroundings. In other words the more hot the steak is the longer it takes to cook it even more. But then again I'm not a chef so I'm not sure what temperatures are relatively appropriate.

actually chaliapin steak is slightly different than this dish. the different is from the meat, the meat from chaliapin is flatten and cover with onion first, and resting to tenderize. btw,.... so it's different..... :)

For a 8-10oz steak (same size as the ones in the video) *All steaks should include a 5-10 minute rest time* 5 minutes: Rare or "Blue" 10 minutes: Medium rare 11-12 minutes: Medium 15 minutes : Medium well 20+ minutes: Well done Hope this HELPS!

Culinarily speaking, medium rare is widely considered to be the "proper" way to cook a steak. Obviously, it's not for everyone.

mrjakey That steak might've even been a little MORE done than medium rare. If you cook a steak past medium you might as well get the cheapest cut you can find because it's all gonna taste the same after that point.
