I'm actually curious why you went the slow cooker route to cook the thighs when you can do those in cast iron skillet and oven or toaster oven? Maybe it's the theme of overall dish? While I can do this too, It would be nice to also do this in just the cast iron skillet I'm guessing cook the thighs first? Any suggestions?

It's just a different way of doing it. I've cooked them in the cast iron skillet and air fryer many times. You can can add the sauce at the end so it doesn't burn. The sauce doesn't burn in the crockpot so that's one of the advantages of doing them that way.
