Small batch of Filhoses
5 cups of flour
1 ½ cups hot milk
½ cu warm water
¼ cup sugar
¼ cup butter
5 eggs
1 tbsp yeast
½ tsp salt
1 gallon Canola oil for frying
1 cup sugar to sugar the outside
In a small bowl, add yeast, 1 tbsp 1 tbsp sugar, tbsp flour and ½ cup warm water. Mix until everything is well combined. To the flour, add salt and sugar. Mix well. To the milk, add butter and warm up in the microwave for 2 minutes. Beat the eggs and add to the flour. Add milk and butter to the eggs and continue mixing so the eggs don’t scramble. Add yeast and mix all the ingredients until well combined. Cover with a towel. After 15 minutes give and hand and try to make folds with the dough. Wet your hands in water so they don’t stick. Cover again and let rise until doubled in size.
Heat up the oil, once it reaches 350 degrees it is ready to fry the dough. Wet your hands in oil, grab a small amount of dough and begin stretching. If you have a difficult time stretching the dough, turn a small bowl upside down and use the bowl to stretch the dough. Also, you can shape the dough into small balls and place it on the table. Once they are all shaped, start with the first one and stretch the dough. Fry the dough until golden on both sides. Drain the oil. Roll in sugar and ready to eat.
Pequeno lote de Filhoses
5 xícaras de farinha
1 ½ xícaras de leite quente
½ xícara de água morna
¼ xícara) de açúcar
¼ xícara de manteiga
5 ovos
1 colher de fermento
½ colher de sal
1 litro de óleo de canola para fritar
1 xícara de açúcar para dourar por fora
Em uma tigela pequena, adicione o fermento, 1 colher de sopa 1 colher de sopa de açúcar, colher de sopa de farinha e ½ xícara de água morna. Misture até que tudo esteja bem combinado. Para a farinha, adicione sal e açúcar. Misture bem. Ao leite, adicione a manteiga e aqueça no microondas por 2 minutos. Bata os ovos e junte à farinha. Adicione o leite e a manteiga aos ovos e continue misturando para que os ovos não mexam. Adicione o fermento e misture todos os ingredientes até incorporar bem. Cubra com uma toalha. Depois de 15 minutos dê uma mão e tente fazer dobras com a massa. Molhe as mãos na água para que não grudem. Cubra novamente e deixe crescer até dobrar de tamanho.
Aqueça o óleo, quando chegar a 350 graus está pronto para fritar a massa. Molhe as mãos em óleo, pegue uma pequena quantidade de massa e comece a esticar. Se você tiver dificuldade em esticar a massa, vire uma tigela pequena de cabeça para baixo e use a tigela para esticar a massa. Além disso, você pode moldar a massa em pequenas bolas e colocá-la sobre a mesa. Assim que estiverem todos modelados, comece pelo primeiro e estique a massa. Frite a massa até dourar dos dois lados. Escorra o óleo. Passe no açúcar e está pronto para comer.

Muito obrigado for this! This brought back so many memories of my childhood. I was born and raised in Hawaii, my dadʻs family and my maternal grandmotherʻs family were all originally from Sao Miguel. Every Shrove Tuesday my Vovo, my momʻs mom, would make a huge batch of malassadas. In Hawaii Mardi Gras is known as Malassada Day and everyone back home goes either to a bakery or, if you are lucky and your family still does it, you eat homemade malassadas.

Don’t sugar them then place them in a zip log bag and freeze them. When you want to eat them place microwave for 10 seconds.

I am so glad I watched this video twice before I made these otherwise I would’ve use the 10 cups of flour instead of the five. Thank you so much though I will definitely make these I appreciate you sharing your recipe

That is why I say to people watch the video until the end. We all make mistakes and I am so used to make large quantities I have hard time when it comes to small quantities. This recipe is a perfect one. Thank you for watching my videos. 😀

Evertime you say folares im thinking of the massa with the eggs :-) we always called it malasadas 🙂They look so light and fluffy :-)

Trying your filhóses recipe now! Fingers crossed! So far the massa doesn't pull away after flipping/stretching, so hoping it fries up ok!

After is rises in the bowl you can shape the doughy into small balls and place it on top of the counter. Then you can stretch to fry. It makes it easy if your not experience on stretching. Don’t be afraid it will work.

Hi Angela, love your channel. Can I ask what brand of flour you use, I know that flour can vary, some need more liquid than others.

Freeze them with no sugar. To reheat them in microwave for 10 seconds.
