Beaches are made out of tiny bits of erroded rock that we call sand and they form due to natural deposition, the sand moved by the new passage will eventually settle back on the beach again with time. The only reason it looks like its 'collapsing' is because of the new errosion caused by the new connection. Give it a bit of time to settle down and it will form a more "natural" connection like the ones you stereotypically would see. its also pretty much impossible to collapse sonething already at sea level, hope that clears it up

River breaks happen as they fill. Assisted or not. As the tide and waves keep flowing after a the break is done, it rebuilds the beach and sand bar/wall allowing the river to build up again. Some systems can cycle every year, while others can be multiple years between breaks
