Small croissants with Turkish delight. Delicious, tender, easy to make.
Ingredients:
Flour - 450 grams
Unsalted butter 80% fat - 200 grams
Powdered sugar - 100 grams
Egg yolk - 2 pieces
Cream - 200 grams
Baking powder - 7 grams
Vanilla sugar - 20 grams
Grated lemon peel - one spoon
Salt - ½ teaspoon
Turkish delight - 300 grams
In a bowl, mix the flour with the baking powder.
In another bowl, mix the butter at room temperature with the sugar and the vanilla sugar (with the mixer or with a spoon) for 2-3 minutes, until it is homogeneous.
Add the egg yolks one at a time, mixing after each one.
Add the cream, lemon peel and salt. We mix and gradually add the flour mixed with the baking powder (sifted in advance).
I obtained a homogeneous dough that does not need to be kneaded too much.
Cover the dough with cling film and put it in the fridge for 30 minutes.
Divide the dough into 4 pieces.
Roll out a 2-3 mm thick sheet, place a 25 centimeter diameter plate over it and cut off the excess dough. Cut the sheet into 8 pieces (triangles). We put a piece of shit on each triangle and roll into a horn shape.
Do the same with the rest of the dough. 36 small croissants resulted.
Put the tray in the oven preheated to 170 degrees for about 20 minutes.
Small croissants are ripe. When they are warm, roll them in powdered sugar and arrange them on a plate.
