When I was a teen I worked at a canning factory and one year they decided to try making maraschino cherries . To make a long story short myself and my coworkers were sick for two weeks after mixing tubs of chemicals without any breathing mask of any type . The owners told us it's harmless, it's just like water vapors it won't hurt you . I remember it was hard to breathe and I felt like I was hung over for like 2 weeks.

Exactly, and the whole point of brine is to preserve the cherries, I'll bet these same people complaining would be up in arms if their maraschino cherry jar only had a four day shelf life. Things get preserved for convenience, and often oils, sugars, brine, or frying makes it a whole lot less healthy than fresh food, which is why you use these as garnishes and don't replace more nutritious food in your diet for stuff like this.

This made me curious so I looked up some things too. Originally these were a treat enjoyed by the wealthy class, which were whole cherries soaked in a drink made from distilled Marasca cherries. Now days this isn't really the case at all. I found it is actually sulfur dioxide and calcium chloride they brine them in...which sounds bad but both actually aren't that toxic in small amounts. Then they are usually soaked in a bitter almond oil which is like a food like embalming process...probably not altogether toxic. The real problem is the food coloring they always add. Red 3 is banned, red 4 was banned but due to the fact they consider maraschino cherries "mainly decorative" they sometimes use this coloring which is toxic. Most often though they use red 40 which the jury is still out on but likely has negative health benefits. Sometimes they use other coloring that isn't even red for other types of these cherries. Take or leave it though...other then they taste really good...I think...they are essentially stripped of all their nutrients by this process and toxic dyes are added along with large amounts of unnecessary sugars so they really have nothing else going for them. That all being said I still enjoy them as most people are scarfing down whole jars in one sitting and there is definitely worse things out there.

Travis Bockmier, clearly they are NOT "super toxic". If they were, everyone who east them would get sick and/or die. "Very slightly toxic" might be more accurate, but when we get into that low level, LOTS of things we eat that are considered to be healthy, or even necessary for living, are also to some degree toxic if too much is consumed.

Brine is a salt solution of some type, like saltwater(sodium chloride), calcium chloride, etc. It is not part of the food color dyeing step or flavoring step, unless you are making pickles or pickled peppers or pickled onions.

For everyone whinging that these aren't "real" maraschino cherries: The bright red maraschino is indeed traditional - it's been around for eighty years, and it's a standard garnish for various dishes (such as ice cream sundaes and various baked desserts). It's just a different tradition. No, they're not as delicious as the marasca-preserved variety. But - at least here in the US - those are an expensive luxury. They cost $20 a jar in the US (compared to less than $2 a jar for the bright red ones), and aren't even available in some areas - they would have to be mail-ordered. I'd certainly rather have a marasca-preserved cherry in my cocktail - but if you're telling me that I'm only allowed to drink at the expensive cocktail bars that serve those, then I'm going to tell you that you're being kind of ridiculous (and elitist). And if you're going to complain about Americans bastardizing your traditional foods: some of y'all have your own crimes to answer for. The tales I've heard about Mexican food in Europe... It's just food. Just like language (and every other aspect of culture), it changes across different time periods and cultures. That's a beautiful thing - it's how the world has developed such incredible culinary diversity. Eat what you like, and let others do the same.

Real maraschino cherries are made from marasca cherries candied in sweetened marasca cherry juice… and that’s it. They’re not chemically brined, bleached, dyed and flavored Queen Anne cherries. 🤮
