Looks great. Funny you mentioned people say mayo ruins the sauce. I don't eat ketchup. I saw a recipe with mayo, Dijon mustard and some other junk that looked good. Surprised there were no sliced onions but still fit to eat.

Use parchment paper or wax paper in between the patty and press to prevent sticking. I just heard those products contain forever chemical or PFAS. You might be onto something keep it simple, nothing fancy. Heck them grills be fancy. Makes me hungry Love your channel

Roll the meatballs once and then smash them burgers. Wait till you have a crust but it helps with sticking.

Fun Fact: When I worked at Wendy's from 1981-1983 we made our burgers smash style long before it was cool to do so.

As a smashburger connoisseur and have made 1000’s of them myself. You need more sear on that first side. It will enhance your burger experience, try it. Give this a try as well, put those buns in that bacon grease and put a sear on those as well.
