Tip for the abalone gauges: You can do them from the bottom if you’ve already popped them off the rocks. Where I live, the rules are to measure them before removing (but always good to double check!)

I see that "sweet chili sauce" hiding behind the spices @ 17:06. Looked great, try some mayo and a slice of your favorite cheese for different taste.

The best way I’ve had abalone/paua is minced and creamed. A traditional Maori way, the cream reality brings out the flavor, once tried you’ll never go back.

You are correct but not minced. thinkly sliced, cover in flour, shake of the excess, pan fry shallots in butter, add more butter and add the paua, fry 2-3 mins max, add heavy whipping cream, reduce and salt whitee pepper to tase. you are a winner.

Slice vertically into quarter inch slabs , slightly tenderise with tenderising mallet, dust in flour and then fry till golden brown in olive oil. Delicious. Drown in fresh water first before cutting up to be even more tender.
