Sometimes the eggs are too old and that is why the yolk breaks so easily, if that helps.

When you do oven shower after baking, did you turn off the temperature in the oven and leave the door open for 2 minutes or you still have the oven temperature on during oven shower? Please advise. I want to try your method. Thank you.

Don't time it. Make it the same texture/consistency as hers. The figure 8 is a good test if you're doing the macaronage by hand.
