Great job on the beef. I've learned the hard way that chuck is usually not tender at the same temperature as brisket, you gotta go higher. I'm going to try your braising method! Looked incredible.

@@PelletsandPits I am looking forward to this weekend. I'm going to have to time it right because we have a bunch of wet wet weather rolling through. Going to smoke a brisket flat and then a day or two later make a Texas brisket chili. I have a feeling it's going to be so delicious. Even the chili will be made in the smoker.

Loved that you used two types of binders and rubs! I usually use mustard but wondered about adding a liquid binder as well. Your chuck roast looked and I am sure tasted great.

You need an outdoor sink Neal. Maybe something like a slop-sink?? I use something like that and wash my gloved hands real quick and they dry off really quicker. I love using the drippings to make a BBQ sauce that completely customized to that piece of meat. Arby's Horsey sauce is awesome! Just started growing my own horseradish and will probably use 5 gallon buckets. We'll never need to buy horseradish ever again! I also have a great recipe for the Arby's BBQ sauce that's dead on.

I make burnt ends out of chuck roast by just a light spray of of water from a spray bottle then spg. Next I smoke it at 250 till have a great bark then wrap in butcher paper and cook til prob tender. I then let it rest down to 140 and then put in the fridge overnight to firm up. Next I cube it and put in butter, brown sugar, jack daniels bbq sauce, choped garlic and choped fine onion. Then I put on the smoker at 325 for 1 hour or until the meat is 150 and bbq sauce is tacky.
