We just made these and they are in the oven for the last few minutes. We used Chimayo chili powder fresh from Santa Fe and the flavor is unbelievable. We smoked a brisket last night and we are ready to tuck in to what we know will be a delicious dinner. Thanks Russ!

Been watching Smoky Ribs for a few years and have learned a bunch, thanks. Since I live in jacksonville, FL I really appreciate the emphasis on southern cooking And most importantly (to me), I ate my first andouille (sp?) last Wednesday. It is awesome. Russ your right about the flour tortillas. In Texas we always use corn. My wife changed it up a couple of years ago with flour. Man they are super good. This is one awesome recipe. Thought about putting more brisket on top of the sauce then the cheese. And yes gotta have onions

#1. Looks great. I use chipotle powder on just about everything. Great in Mac n cheese, corn dishes, finishing ribs a light dust sets them off. You're lucky you're in Mississippi and not just west of Fort Worth or you have moochers for dinner

Awesome recipe Russ and I'm totally hooked on your vids. I love me some smoked brisket enchiladas. I've only made smoked chuck steak enchiladas but using smoked brisket is def next. You essentially made a mole sauce which I love with beef enchiladas. The only thing I do differently is add some bitter sweet dark chocolate to the sauce. It add's a bit of sweetness and a hint of chocolate. I too prefer using flour tortillas over the corn. Thanks for sharing and cheers to you!
