Agree with you; we tend to over trim. Fat is taste, trim if you must after cooking. I hd that mistake (over trim) when doing a briskit. Turned out too dry. Some triming but very little.

@ I would say the bison shank is slightly smaller - as was the bison brisket I got (about 6 pounds) - also have two racks of bison plate ribs (8 bones each) - and would say those are slightly larger than beef - lots of bison smokes in my future ! Happy Holidays to you and your family

No I don’t but it’s easy. 3 jalapeños, 8 Serrano peppers, half a yellow onion, 2 garlic cloves, 4 Roma tomatoes. Bring to a lot boil and blend. Add salt, pepper and a splash of oregano 👍🏼
