I've been saying the smoke hole was Justin's hole since I got the SnS , oops, that's uncomfortable haha. In all seriousness, I will have to try a salt brine again. Last time I tried on a something, I over salted it and the meat was salty. Been hesitant to try again after that. Thanks. Looked delicious Mike!

Thank you very much, Troy! Don’t be afraid to give that salt brine another try. Once you nail it, it’s life changing and that’s no exaggeration. Cooking is all about trial and error. Give it another shot and I’ll bet you’ll slam it! Cheers!

my slow n sear always shoots up in temperature and seems to light more coals than it should (all along the bottom) I cant seem to get it under control at all at times other than remove heaps of the lit charcoal.... not a fan so far of it despite all the hype

sounds like you may have some air leaks getting into your kettle?
