Question for you if I put some chicken legs on there would they cook the same amount of time and I'm from Texas just moved to Oregon and I miss my HEB that's for damn sure.. and these look wonderful I've been cooking for 17 years retired and then went to the oil field and then left because of well you can figure that out we lost our jobs

So I'm new to pellet smoking, but why do you smoke them with a baking pan/drip tray setup? Wouldn't that reduce flavour? Do you do everything like that?

So the rack is elevated from the tray. That allows the smoke and heat to still get all around the chicken pieces. By putting them in there the way I did, it reduces the need to clean the smoker because everything will be caught in the tray. So you get the same taste without the mess. Also, no I do not do everything like that, just do it like that sometimes.

My wife has 2 packages of skinless boneless chicken thighs she has planned for chicken enchiladas for tonight's dinner. However, she has slept in this morning & I just so happen to have some Suckle Busters Clucker Dust Rub I've been wanting to try & a Pit boss vertical smoker that has been sitting idle for the last week.
