That rub sounds awesome. My current go to is SPG with a sprinkling of ground coffee. I’ve never had better bark than when I add coffee

Beautiful brisket, great job! But I noticed the underside of the bark got washed off. I used foil for the first time in my wrap not too long ago and I had the same problem. I think I wrapped too early, I should have pushed past the stall and hiked up the temp in the pit and let more moisture evaporate before wrapping. But it's hard to balance that with trying to keep the brisket moist and juicy.

Yessir, I agree for sure. To be honest I don't worry too much about the bark on the bottom since I cook fat down anyways. Still has a really nice flavor!

It was about 14lbs, and I would smoke per the video. Smoke until your bark is set and you have good color, and then wrap and continue cooking until tender. Unfortunately there is no magic time from for brisket and the best advice I can give is cook to color and then cook to tenderness.

That's the best looking pellet smoker brisket I've ever seen. However, I think you could've let it go a little longer before wrapping. The bark was near perfect!

Hi Chris, typically get my meat from Costco, Sam's Club, or a butcher not too far from my house. This brisket was from Sam's Club I believe!
