Fun fact, kingsford began as a ford motor company product. During the Henry ford days of car manufacturing a lot of wood was used for car parts like the wheels. There would always end up being scraps that could not be used and Henry ford hated wasting these scraps so he started his own charcoal company.

This is my favorite channel on youtube. I like bbq pitboys and all but this guy got me checking twice or three times a week if he's got a new video. He is very relatable and doesn't tell you how to bbq. He just shows you how he does it. Greg don't stop ever! I don't want watch netflix i'd prefer watching your videos!

Good call with the paper towel or napkin. For those wondering, using the paper towel or napkin is the way to do it. The napkin provides grip when removing the membrane. Those look amazing!! I'll be smoking a rack or two with some roasted chicken tomorrow.

Wow, what an honor to get out to the CMT awards (I'm not a country fan, but still, it is a big deal). Did you catch the excitement for the Predators in the Stanley Cup Final? I am a Pens fan but really admire the spirit that Nashville had for their team. Most folks shy away from mentioning brands, which is a shame. If there is a good or better brand for a product, from a source I trust (which is you, Greg) I want to know about it, so I appreciate knowing about the longer burn charcoal (I will still make my own sauce, though).

Greg- In your Applewood fib video you mention raw apple cider vinegar being mixed with brown sugar and then you say apple cider when you're coating the ribs. Which one is correct as it sounds like it could go either way. Love your videos. Thanks.

Good recipe Chef. I like the idea of starting a snake in the middle for more even heat. Do you find the Weber-supplied thermometer to be accurate? I replaced mine with a calibrated probe type instrument also with a longer probe. Thanks for the recipe. It's on the menu for July 4!

I've been looking for the perfect rib recipe and I hope this is it. The only changes I will make will be to cook on a Traeger Pellet grill and instead of using Tennessee Whisky, I'm going to support my home state and use a good quality Kentucky Bourbon. Probably Woodford Reserve, since it has a little sweetness to it.

Justin I think with the vent by opening it more increases air flow and also temperature if you close it the fire will drown and temp will decrease hopefully an expert can verify though

Hamzaballer23 is correct. If you do see a dip, just open the damper slightly. This cook maintained the 250º mark until finished. I checked the temp again about 2 hours later and the temp had dropped about 10 degrees.

Hey Greg, awesome video. I do a lot of BBQ-ing, however, I haven't been able to afford even a cheap kettle BBQ. So most of my BBQ-img has been done over open coals. My question is as follows: how long does that charcoal you've placed last? And did you need to add anymore charcoal during the three hour plus cooking process?

Greg, the Slow N Sear people tell you to put 12 lit coals in the corner, but do you think if would be better to place the coals in the Slow N Sear just like you did in this video? Thanks for any input.

I use the same grill, but when I do ribs or a roast, I use a water foil pan underneath the food. Is this necessary? Great video, I have used the Kingsford bbq sauce with great results.Thanks Mark in Cleveland Ohio.

I've done ribs twice using this charcoal method. The first time was perfect and stayed just about 250 the entire cook. The second time, not so much. The temperature was constantly fluctuating up and down. I'm thinking maybe I didn't stack briquettes correctly. Do you think stacking them incorrectly could have been the issue?

Greg, two things. I've used the Kingsford BBQ sauce - it's fantastic. Second, I've worn glasses my whole life - I recommend going to have your eyes examined and fitted for an exact prescription. DO NOT MESS WITH CHEAP GENERIC GLASSES! You'll cause permanent damage to your eyes. Ask Elton John.

Therefore I'm pretty confident in naming the Tennessee whiskey you used in the recipe - but I won't name it because you didn't ;) but you have before, if correct in my assumption. Umm unless you acquired one those few brands produced in Nashville? There's only a few others than you-know-who ;) And now that I know Kingsford sauces really exist, the trick is to find some.

LOL! Hint: The whisky comes from a craft distillery located in the old Marathon Automotive Factory. The sauce is really new, so it may not be in your stores yet. It literally popped up in mine last week.

Thanks for the hint! There's only two I know of made in Nashville, so it wasn't the other made in a dry county, nor the other one from Nashville. There's only a few left in this state. Also good tips on membrane removal...this one recipe I plan to give a try as it is (but I'll likely be using "the other" spirit;) Glad you liked the city, hope you get to visit again...in other words - "Y'all come back now, ya hear" :) Cheers!

I know of "Pappy" first from the TV series "Black Sheep" or close to that, and through history....the plane name doesn't ring a bell without research....he flew a lot in different branches of service as I recall... but think I got your spirit from the first hint ;) Unless there's a new craft distiller I don't know about.
