With the weather changing, I just got around to making this and man, it was phenomenal. Followed the recipe to a T, but cut the sugar down from 1/3 to 1/4 cup. Phenomenal recipe. Very well done.

Your recipes are AMAZING! The one thing I love about chili on the egg is, about 20 minutes before it's ready to serve, I pour some cornbread batter right on top of the chili and bake it to perfection! Seems like the cornbread goes too quickly when I do that, but it's my favorite!

I made this chili recipe and followed it step by step cooking it on my Pit Barrel Cooker for my company’s chili cook off today. I used your bon-a-fide chili seasoning to season my two chuck roasts for the chili. I did everything else almost exactly the same but used two cans of the chipotle chili's in adobo sauce! I made this over the weekend. Didn't stray too much from the recipe. I knew the people I would be serving are not a huge fan of things very spicy, so I omitted some spice and substituted more fresh roasted red and green peppers. It was the best chili I have ever had. I never would have thought to smoke a chuck roast for the meat. I am doing that every single time I make my chili now. Thanks for posting this!!!!

I smoked a brisket this weekend. Its Monday night. I used about 3 lbs of brisket, 1 lb of 80/20 ground beef, onion, red bell, jalapeño, serrano, tomatoes, garlic, corn and black and kidney beans. Just wanted to let you know, I tried this recipe yesterday using brisket and HOLY COW was it good. This will always be a good to recipe for me from now on with left over brisket. Thanks so much. (edit 01/11/22) at 3:40, the recipe says 12#'s of brisket or chuck roast. I think you meant to say 1-2#'s of either. There is no way that you have 12#'s of chuck roast in your glass bowl. Still love the recipe, have made it using brisket, chuck roast and even pulled pork.

My work was closed due to the weather. In San Antonio that meant there was a bit of ice. Cooked up the chuck roast on the egg the night before and the rest on my deck in the freezing cold the next morning for lunch time chili. Malcolm, that is some incredible chili. Holy moly this was good!!! I made it today and I had to scale back on the spice level because my crowd can't handle the heat so I did regular pork sausage, no hot sauce (just a dash of vinegar instead), half a chipotle pepper instead of 3, and Anaheim instead of poblano. Best chili I've ever had

Malcom I made this recipe on my Akorn on the weekend. Used some leftover prime rib as well as a piece of outside round which I partially cooked in my pressure cooker to about 160 deg. Instead of smoking beef in advance because i wasn’t prepared ahead enough, I threw couple hickory n pecan chunks on the Akorn for some smoke flavour during the cook which lasted about 4 hours at 300. Man that might’ve been the best chilli I’ve ever had! It’s going to be my go to recipe from now on. Awesome!

I made this chili the other day and followed the recipe for the most part except I smoked a couple tri-tips instead of the chuck-roast. Then I smoked my peppers and onions for awhile before putting a char on them. I used mesquite wood on my weber kettle. It was perhaps the best chili I've ever had! The mesquite smoke and the spice combination was perfect to my tastes. I like a little cinnamon in my chili which I usually sprinkle a bit on my own bowl. My wife was convinced it would be too hot for her but after pestering her for awhile she tried it and agreed that it was really good.

I made this almost exactly to a T and it was the BEST chilly I have ever had! Thanks for all the awesome tips and great recipes. I want too add for all the charcoal guys out there I started using B&B hardwood briquettes that they can get supper hot when needed and also keep great temps for long cooks! I’m not having to refuel anymore..

I made this last weekend and it was the greatest chili I've ever made. I used Goya Adobo in place of SPG and added two packets of Sazon Goya and a bit of jalapeno powder to the chili dump. I also added 5 chipotle peppers instead of 3 and man it was HOT! I added 2 cans of hot chili beans and 1 can of black beans. The next day the heat was way more manageable. Everyone LOVED it.
