This looks soo AMAZING!!! First and foremost, I am not a good cook. I sure like to try lots of these videos and my family does love which is the ultimate test of course. May I ask, why the long cook (2+ hours) in regards to what you are looking for? In my complete novice mind, I would think that the meat and cheeses would certainly have all cooked down by then and my concern would be that the liquid would have cooked off / evaporated too much. Again, please, I can clearly see this is awesome and I will absolutely try and sure to enjoy. Just curious as to some of the reasoning as it initially seems counter intuitive to me at the moment. Thanks so much as always for sharing!!!

"smoke flavor" (not much surface area for food in a cast iron Dutch oven) and "combining the flavors" is my guess for why the longer time. (Block of Velveeta, jar of salsa, and a block of cream cheese is my go-to in the microwave: 50% power, stir every couple minutes.)

We just like to combine all of our ingredients, let it cook down, simmer, and let those flavors combine. You can do this recipe any way you please. It can be done in the oven, crockpot, etc. Just get it to the consistency you like and stir every so often.
