This turned out absolutely amazing, I let it go to about 205 degrees and it was fall apart tender and then we took some hard crusty rolls we melted some provolone and muenster cheese on them and then sliced our chuck roast stacked it up real nice and put all the onions on top and then a little au jus to dip it in. Top shelf eats thanks again Tony 🤘

I bought a Pit Boss wood pellet smoker and have been watching You Tube videos of how experts do it. I have followed the recipes from the pros but what I am finding is they put way too many spices on the meat for me. Last time I smoked, I just used a little salt and pepper and used a mixed blend of wood pellets and it was much better and the flavor of the meat really popped. I will probably try more of the You Tube recipes but I don't want meat candy like some of the other people make. Good video but I wish I could have had a slice of beef at the end and now I am craving beef chuck roast.

I tried it with your twist. The only thing I did diffren was I put a water pot in my smoker with guiness in it. Ended up tasting amazing. Thanks for the tips!

Just getting into smoking and I'm using one of your cheaper off set smokers. It alot of work putting small splits on every 15min. To hot or not hot enough. I'm enjoying it though. I'm a pyro so not so bad. I'm am looking at getting a pellet smoker for the summer months. Hot here in Charleston SC this time of year.

Great looking smoke ring on that roast. Like the idea of using the onions like a rack to hold it up off the bottom of the pan. Finished product seemed tender and juicy. Awesome cook and video as always 👍🏻

My 5 series won't maintain a consistent temp without water. Temp swings wildly. With a full pan it swings 20° each way and my graph on my Signals grate probe shows very little fluctuations, when water runs low it starts to swing a little so it's time to spritz and fill the pan

Looked great. Looks like your having good luck not running water in the pan with that vertical. ( I have the 4 series). I’ve seen other videos here people have tried using no water and there’s stalls out. Any idea why pit boss says you need to use water with this pit?

I consider the water more of a tamp controller especially in the summer(controlling fluctuations). but most importantly its defiantly a heat shield... on my next show (Pulled Pork with a white Alabama sauce) I will be using the water pan. thanks for the question.

Well it turned out fantastic! It was Smokey, it was moist, it was incredibly flavorful! My stall was at 145, but other than that, it was spot on!! I will be doing this again! Overall it took 6 plus hours, but that is going to depend on the size of roast!! Got a call from one of my guests the next day saying how much they liked that roast I did!

Definitely looks good - why did you have the extra foiled pan in the bottom of the vertical smoker? I have a chuck roast I need to smoke and this looks like the way to do it.

Hi Louis. first off thanks for the comment. in the beginning of the cook I explained I was running the Pit with no water pan. I used 2 racks covered with foil as a heat shield. seemed to work pretty well. thanks and thanks for stopping in. i'll be looking forward to your chuck.

How about when you wrap it, you add some potatoes and carrots to the mix? Would they get overdone?
