In this video I show you haw to make some poor man's brisket, AKA smoked chuck roast.
Salt the beef the night before, roughly a 1/2 a tsp per pound of beef.
LOW SALT BEEF RUB
1/2 cup Coarse Ground Pepper
4 TBSP Kosher Salt
2 TBSP Garlic Powder
2 TBSP Smoked Paprika
Smoke at 250 using pellets of your choice, I used competition blend.
Smoke until they reach internal temp of 165 (roughly 4 or 5 hours)
Wrap tight in butcher paper
Continue Smoking until meats reaches 205-210
Let it rest in a cooler for 30 minutes minimum
