In this video I show you haw to make some poor man's brisket, AKA smoked chuck roast.
Salt the beef the night before, roughly a 1/2 a tsp per pound of beef.
LOW SALT BEEF RUB
1/2 cup Coarse Ground Pepper
4 TBSP Kosher Salt
2 TBSP Garlic Powder
2 TBSP Smoked Paprika
Smoke at 250 using pellets of your choice, I used competition blend.
Smoke until they reach internal temp of 165 (roughly 4 or 5 hours)
Wrap tight in butcher paper
Continue Smoking until meats reaches 205-210
Let it rest in a cooler for 30 minutes minimum

Dave, that's a brilliant use of my own good old friend, Charles Roast! Watching this video inspired me to try your recipe. My wife turns up her nose at any beef not "prime", but it’s breaking the bank! I'll get one or two-pack at Sam's next week and try this. Question: Is that ordinary butcher paper you're double wrapping it in, or is it special? Keep smokin' and jokin'!

It’s ordinary butcher paper, at least the peach stuff, it just has a bunch of Traeger designs printed on it

Love a chuck roast. However, in my area they are just as costly as a brisket at regular price. "Poor man's brisket" no more, lol. I'll wait for the brisket to go on sale (approx $2/lb) and throw it in the deep freezer. I typically will grab a chuck if it's in the reduced price section after its been on the shelf for a while.

Greetings, haven't seen a Vid in awhile. Chuck is definitely multi purpose and a great alternative to brisket (we do them often). Yours looked really good. Have you salt brined overnight with the meat on a rack, uncovered overnight? It seems to pick up more smoke flavor.

I received a big Traeger smoker. I have no real experience using a pellet smoker. I have always used a gas grille. I have a really dumb question- since my heat varies so much from end to end, where is the best place to position the meat that i’m cooking? I’m assuming someplace in the middle on smaller cooks???? When I’m doing larger cooks- like a bunch of burgers or say pork chops, should I be rotating them around so they get even heat? Thank you.

I usually find the coolest spot for small things, but if I’m doing a bunch of items, like you said burgers, you are probably going to want to move them around. I’m not sure how the Traeger works. Does it have an area that you can let some of the flame come through?

@@daveshouseofbbq There isn’t any open flame. Just radiant heat. I’m pretty new to this so I think I just need to find the sweet spot with the temp and im guessing It will be okay. Thanks
