Ahh I see, you answered my question in the video Grumpus, corned beef brisket is one that has been brined first. 4 hours for the cook is a very manageable time too. I was so happy to see those rye bread slices - I love strong rye bread! That smoked salt beef looked so juicy - oh my! Great job grumpus, a great sandwich! Cheers

Greetings Marky! This was my second attempt, and it cooked up perfect. The key is to soak the brisket in water overnight. On my first attempt, I only rinsed it off and cooked it up. WAY too briny! I ended up using it for seasoning in other dishes. This time it was spot on. I love a good dark rye bread, and the kraut was just right. Thanks for your support. Cheers Marky… 🍻🍻🍻!

Good job but I like to keep a bit more of that fat on the top. And cook fat down. Protects the meat from any direct heat that may contact it depending on the pit it’s cooked on. Some people claim fat side up keeps the meat moister and in theory it sounds rite; but in practice I haven’t noticed any benefits opposed to fat down Only thing different I see when doing fat up is sometimes a too well done or in worse cases burnt bottoms but again it depends on the pit and where your heats coming from. For example if using a drum smoker definitely go fat down and you’ll be glad you did. Made that mistake years ago and ruined a prime packer and was quite upset with myself. The meat on top half was great the bottom was terrible. Also I rest one hour min. More would be even better if you have the time

All good info Bryan. Every cooker cooks differently. What I encourage folks to do is to get out and learn their pit. Only time and experience will make you a master of YOUR pit. I (by habit) usually smoke on the top grate with fat up, because the heat is hitting the meat hottest at the top (on my smoker). Thank you so much for taking the time to watch and comment.

It’s a fine line between the two, Thomas. And, the line seems to get grayer in modern times. Here’s a short summary I found online: “Today’s corned beef and pastrami are both made from beef, albeit different parts of the animal. Corned beef is made from brisket, which comes from the lower chest of the cow; pastrami is either made from a cut called the deckle, a lean, wide, firm shoulder cut, or the navel, a smaller and juicier section right below the ribs. These days, you may also see pastrami made from brisket.” The cut I used in this video was a brisket point.
