I have friends and family from all over The UK and Australia. Even they aren’t consistent on how to pronounce Worcestershire so I just call it “what’s-this-here” sauce. I had a Weber Smokey Mountain which I loved. By all accounts the pit barrel smoker is awesome but fire management was an issue for me on long cooks so I decided to go with a Traeger pellet smoker. I absolutely love it so far after about a dozen cooks.

Looked incredible Greg, I have also been experimenting with umami builders a lot. I believe we are crossing over in our ingredient profiles, and breaking new BBQ ground. One big appreciative thumbs up from Blue Collar BBQ!
The best ribs i've seen Greg. If I can ever manage to get some that good I'll be exremely happy. That black label Asahi is excellent too. Probably the best mainstream commercial lager that i've tried. cheers.

Why are you using lump charcoal? It burn faster than briquettes and briquettes are recommended with the PBC.

Pretty much have to order them from one of many mail order prime meat companies. All of the local independent butchers are gone from our area. If you want something nice you’re going to have to order it.

I get that cut of beef ribs from my local Publix. Ask the buthcher in your local grocery store for "Uncut Beef Short Ribs". They will come packaged the same way he showed them to us at the beginning of the video.

I dry brine with salt but I always use MSG instead of salt in any of my rubs/sauces. I'm guessing science dictates just salt for brining even though MSG is actually healthier if you need to watch sodium intake.
