Howdy Jimmy. Damm those shrimp looked good. Wish i had some right now. Im thinking those srimp on a Po Boy sandwich and a cold beer, hmmm. Here's a suggestion to kick up the flavor some. Cut those lemons in half first thing and put on a hot grill and char up some of that lemon flesh THEN use the lemons the way you did for the rest of the cook. Charing both fruits and vegetables is something all of us forget at times to do( yup, even i forget about that little trick far to often 😂). Thanks Victor I’ve been trying to see if smoking the lemon halves will do the same thing and maybe add a kiss of smoke also.

@CuffNStuffBBQ well here's the thing, you need a good high heat to sear them. And that's basically what you're doing when you "char" things. But just crank up your pellet smoker to high and put the lemon half's over the fire pot, just enough time to Char them. Then go ahead and lower the temperature back down and finish your cook like you did. Your going to get your smoky flavor AND the benefits of the Char. I know what I'm doing next week on the webber kettle.

Jimmy, I believe I heard you correctly that temp of smoker set at 250 degrees??

Jeremy you are correct I was cooking at 250 on the top rack. Actually on my pit boss I have to set it for 220 to maintain 250 at the top.
