I'm with you Ryan, I love using oak wood for smoking. I have an endless supply of hardwoods here in Arkansas. My favorite is hickory, white oak and post oak. Yet to try red oak, but have plenty to try. I like the idea of the mini meat loafs. And that bacon jam, oh ya.
@SmokyRibsBBQ5 жыл бұрын
Personal sized meat loafs is a great idea Ry and man those looked amazing, especially with the bacon jam! I used post oak for the first time not that many months ago and it is awesome, and the smoke smell is really good. Different from any other wood I've used thus far. I hope my local Academy Sports keeps carrying it.

Great video Ry after using kettle zone system if you were going to cook brisket or pork butts how would you set up charcoal to facilitate the longest burn that would work the best with that system, would using this system or some other setup Aka the sns to do long cooks of these types,which choice would you have.I have a vortex on the way as you have made it apparent how useful it is.
@CookingWithRy5 жыл бұрын
My personal opinion is that a brisket in the 15 lb range can be a challenge on the 22" kettle. With something like the Kettle Zone you're going to run into difficulty adding charcoal since you likely are going to be using both deflectors and both grates. It's doable, but a bit of a hassle. I would prefer to use the SnS for a cook that's going to go beyond 7 hours, or the simple briquette baskets. The Vortex might stick out a bit too far under the brisket and create some direct cooking :)

Question(s) about the grill set up: I notice that when adding wood in your videos you do so after putting the food on. Is there a reason? Could you not put the wood on and let it catch while putting the food on to reduce the time the lid is off?
@CookingWithRy5 жыл бұрын
I could do that, but some things get shifted a bit for filming purposes. Your way would work perfectly fine :)

Hi Ry, How long did it take to smoke these

Without the deflectors I would do them indirect with briquettes on one side of the grill. As for cook time, if I didn't mention it in the video I wouldn't know since I was targeting internal temperature as my guide :)
