Man that is the BEST smoker!!! Would love to see a short video of the various airflow management devices... for example, where the ports are to direct smoke to the different chambers and the ports that allow for smoke to escape.

I’ll make sure to share this soon. In the meantime I paid for two ports one on the vertical and one on the horizontal. I’ve yet to even use them due to the even temps the smoker produces. With the amount of meat you can put on this grill I immediately found that a good digital thermometer is the best option to check all proteins being smoked. Thanks for checking out the video.

You know, you've been cooking on that Weber so long and burping it that I see you continue out of habit I guess to open the LSG lid with some reservation. At 250 and being so large there's no chance of an Oxygen starved zone. Good to see you having fun with it though, it appears rock steady with temps and that's a big plus.

I miss the Oxtail cook offs me and my retired brothers used to have on a regular in Kuwait. Oxtails were 5 KWD ($17.00 USD) for about 15 lbs. We "Did the damned thang!" too. I'm talking about FRESH Oxtails, where they bring the complete long oxtail out of the walk-in and ask you how you want it cut. This was 2012-2016, and those were the days. I don't know what beef sellers problem is here in the USA, because oxtails are ridiculously expensive here.

I wouldn't recommend it. Oxtails already have a high fat count and the addition of tallow would probably be an over kill. Hope this helps.

I smoke my oxtails in my Oklahoma Joe’s offset smoker rubbed in KosmosQ rubs and using a mixture of wood splits or chunks, my cook time is 4 hours of smoke and 4 hours of braise. OXTAILS SO TENDER U DNT NEED TEETH.
