I just scored a 4 lb pork belly from my local butcher. I'm totally going to try this recipe with it. That pico looks delicious!

I am starting to branch out from bbq however i think it would go super well in a ramen noodle dish. My first smoker wasn't very expensive. I had an Old Country Trans Pecos it was a great pit under $400. Got it at Academy.

Yes, after grilling. I just sliced around it, discarded the center and diced the outside.

I’m sure you could substitute the slow smoked pork belly for any leaner, grilled pork chop to get a rough approximation of this outcome. I’d imagine if you were to grill a tenderloin, slice it and serve this salsa on top you’d have a pretty damn good meal on your plate 👍
