This is a breakfast sandwich that we like to make in the early morning hours of an overnight BBQ cook.
We take a roll of breakfast sausage, roll it in NMT Southern Sweet BBQ rub recipe, and put it on the smoker until it reaches an internal temp of 165f, about an hour to 90 minutes, depending on your smoker temp. put a 1/4 cup of maple syrup in the smoker for 10-15 minutes. Fry eggs and season them with brisket rub. take the sausage out, slice it and drizzle the smoky syrup over the sausage. Top toasted English muffin with egg, cheese, and sausage. Wrap loosely in foil and pop that back in the smoker for 5 minutes. Enjoy.
