I tried them and honestly didn’t see a huge difference in them and the bear mountain pellets I normally use. And I’m definitely not a pellet hater but they will never take the place of off set smokers. Keep up the good work!!! I really appreciate all the work you’re putting in. I can’t wait to try your brisket rub.

I can't remember if i've tried those pellets. I'll pick some up and try them out. For me, these pecan pellets were like going from smoke level 1 on a regular pellet to level 11. Very noticeable difference for me personally.

My Yoder pellet smoker does a pretty good job at adding smoke flavor and a nice smoke ring. But what really made a difference, for me, in adding smoke flavor was the use of a 12" smoke tube filled with pellets just quietly burning away on the lower grate. Enjoyed the video, thumbs up and thanks for your time.

I used a tube for the first time last weekend while cooking pork belly on the traeger. I was pleasantly surprised how smoky they were! Offset quality smoke? Not quite. But still way better than without the tube!

I used to do the smoke tube myself until I purchased a Smokai smoke generator, I don't own an offset smoker but my briskets now since adding the smoke generator to the pellet grill has elevated my cooks.

Here in the South a common wood blend for smoking is pecan, and hickory. The blend gives a sweet smoke flavor. Pecan shells are readily available here in my part of Georgia. I have experimented with pecan shells on my wood burner but the burn rate is quite high. I have switched to a pellet grill-smoker now that I am older . Pecan-shell pellets is very interesting. I will try a blend of hickory pellets, and these pecan pellets.

I just tried these in my LSG pellet. This stuff put out a crazy amount of visible smoke. Was the taste any smokier than any other wood pellets? NO. To be fair, I smoked chicken breast with hickory pellets, then the pecan shells. I invited some friends over for a blind taste test. They just didn’t impart any more smoke than the hickory, I was surprised given how much visible smoke there was.

I will, but chicken is particularly good at absorbing smoke. I would love it if you would do another test against wood pellets. I completely agree with your previous test of different wood pellet’s. I did a similar test with same results as you.

@@SmokeTrailsBBQI think you slightly underestimate the flavor of post oak vs the birch you used. I’ve seen your briskets with a wider smoke ring. I also believe you added a few too many flavor variables, like the binder… you describe it as having great flavor… as opposed to using just Worcestershire, or no binder. And… in trying to help David elucidate his descriptors, I believe you MAY have led him to a conclusion.. such as “more beefy?” This said, you worked hard on this, and I don’t believe you were consciously trying to sell a product.

I purchased these pellets after seeing your video too Steve. I smoked some St. Louis ribs Texas style and they came out amazing. I usually use my workhorse to smoke ribs because I love the smoke flavor but with these pellets I will definitely use my pellet smoker more.

I'm running them in a Yoder YS 640. They do tend to kick up more ash than the Lumber Jack. The flavor was good - but nothing earth shattering for me.

I was recently given a box and used the pecan pellets to smoke some short ribs on a pitboss Lexington and, oh boy, let me tell you, they came out awesome! I was really reluctant on using my pellet again because I want too pleased on the lack of smoke regular pellets produced. I just purchased a box of pecan pellets and looking to smoking a brisket with it. In due time I'll do a comparison between the pecan pellets and an offset using pecan wood or maybe the shells itself.

Thank you for the in depth comparison with these pellets vs offset. I just used these and felt they performed well but not worth $27 for 20lb versus $8 for 20lb for Bear Mountain. It’s still fun to experiment.

Offset smoker are king and always will be king. The pellet cooker might get close or match smoke flavor ether now or some point in the future, But what makes offsets so great is the air flow… the depth of smoke flavor and rendering ability seems to be an insurmountable hurdle for any other style of cooker. I’m very biased lol but Putting a brisket on pellet grill fills sacrilegious to me and wrong but anyways always a fan of your videos Steve!

haha I wish that were true. At the rate I'm going, one day i'll figure out a way to make an offset smoker brisket in my microwave. For now you are correct though, offsets are (currently) king.

I switched to pellets years ago because family, friends and customers could NOT tell the difference and it saves me a ton of time and work and I can sleep and make great BNQ at the same time. No brainer IMHO! I use high end smoker (Cookshack) no cheap big box store Chinese junk and I also use 100% flavor wood pellets, not blended ones with cheap fillers like alder wood like Trager uses.

You are always going to get better smoke flavor on an offset vs. pellet grill/smoker. Even if you use a smoke tube, they just don't match up with offsets. But they are easier to use and still put out good tasting foods. The Smokin' Pecan Pellets are fantastic although a bit on the pricey side.

I am encouraged by this video. I was thinking I will never be able to use my pellet grill when doing brisket (I usually use my Gravity smoker). I did a half brisket on my pellet grilled and it sucked. I am definitely going to get these pellets and give it a go. Thanks Steve for doing the heavy lifting for us.

Have you ever thought about putting actual pecan shells in the smoke box of that Woodwind Pro of yours in addition to the pecan shell pellets? I wonder if that would work. The shells would probably burn pretty fast, but I’d love to see the results.

@smokinpecan The funny thing is that years ago, I asked the owner of a pellet manufacturer if they had ever considered using pecan shells to make a pellet. She actually told me that they couldn't because the shells lacked the necessary lignin to hold together. I guess now I know that she was mistaken.

to answer your question, nuts are known to be composed of a higher percentage of ligma than wood is, and this property carries over to the outer shell.

Steve, I tried these about 5 months ago and didn’t really find a huge difference in the outcome. I normally use Lumberjack Hickory 100% pellets and I also use a pellet smoke tray that smolders for 3 to 4 hours. I love pecan wood flavor and scent better than any other wood.

Steve I have a question. Do you let your brisket get to a certian temp before you put it in your holding oven?

Depends how cooked it is. If it's at 190 it's usually still tough so I put it in right away for the carryover to finish it. If it's 198+ really tender then I'll rest it down to 170ish first

I used them. No more visible smoke at 225 and over. My Maverick 1250 has a modded firepot and RTD gain which already produces more smoke than stock but I didn’t notice a difference with these. Didn’t use them at very low and slow. Flavor on some shorter 4/5 hour cooks wasn’t any more pronounced than any other pellet. I you can’t use something like a smoke cage on the Maverick 1250 you can use a little box like Mad Backyard reviewed and get that wood chunk flavor in your pellet grill. The smoke cage works great once you figure out how to use it.

I wish they would stay together a bit better. I had a lot of crumbs and powder. I ended up mixing with knotty plum and had great results.

Never had an issue with these but I think it's like all pellets. Some times you just get a bag that's been dropped or moved around one too many times lol.

@@SmokeTrailsBBQ It is a tiny indoor pellet smoker. One would have to cut a rib into two, as I recall. A while back, Jeremy Yoder did some tests on their company floor. Perhaps under a controlled environment and it could be biased. The real test will come when people like you get to test it. If they are confident of the unit, I'd think they might loan you one. Thus far, it seems legit.

Would you consider cold smoking a brisket then cooking it in the oven with no hot smoke and see if it is as good as hot smoked brisket? You could get a big ice chest and fill with ice and put a rack on top of it and the brisket on the rack, cut a hole in the ice chest and run smoke from outside into the smoker with a clothes dryer hose. Do it at night to get the most out of the ice. Add more ice if needed. The smoke should not be hot since it is traveling far from the heat source into the ice chest by the hose. Do this for four hours and then cook it low and slow in your oven and see how it taste compared to a regular smoked brisket. Reason for doing it at night and having ice is to keep it low enough to keep it food safe for four hours. I suggested this to Guga in a comment of one of his vids. Not sure if he will do it but maybe try it and beat him out.

Heey Steve, could you help me out? I'm planning to get a new smoker. I was thinking of a Masterbuilt/Campchef type of smoker. Only, there are a few videos that show significant increase on fuel consumption compared to a smoker/grill in which you have to add fuel once in a while. Do you know a Masterbuilt gravity like smoker of which the fuel (charcoal or wood) is lit from the top so you don't get a firestarter effect which could happen if you leave the shute of a Masterbuilt open for too long.

Hey man! Not quite sure what you mean. Camp chefs are pellet grills and the masterbuilt gravity is a gravity smoker. If you're saying you want to get a gravity smoker, the masterbuilt is pretty good for the price and it has a good balance between smoke flavor and convenience.

@@SmokeTrailsBBQ I mean a Masterbuilt can be mixed with real wood and a Campchef has the added wood feature. They're both set it and forget it grills. I'm searching for a set it and forget it grill that can be used using wood only. Preferably something that has a firebox low enough to be able grill on it while smoking other meat. As the shute of the Gravity fed is actually a big firestarter with a lit to slow the burn down, I was hoping to find a different system that is also a set it and forget it system but which can also be used with wood only. For example if you have a Masterbuilt-like system that is lid from the top.

I wonder if the pellet grill smoked brisket would have a more smokey taste if you used a smoke tube. In my experience, using a smoke tube definitely adds more smoke flavor than smoking without.

Fun video. Really enjoyed it. When it comes to taste tests, would you consider doing a blind triangle? Three samples, two are the same, one is the odd man out. The taster needs to pick the odd man out. If the odd man out can't be identified by the taster, then that is really goos information. If you have some help, you could do this on yourself as well. Repeat as many times as you like to get a good sample size. Looks and smell arent quite as easy to do this with, but I hope you'll consider doing this with taste tests.

The gravity wins everytime.. but the fuel consumption is my onky complaint .ive been holding off on a pellet grill but this video sure is swaying me to press purchase. I definitely can tell a difference when I smoke with fruit wood VS oak. I don't doubt the brand of pellets makes a huge difference but I've never cooked with your wood choice to know how it compares to oak in flavor.

Steve makes a great point at 17:28 Though many of us perceive the difference in smoke aroma from one wood to another, specially during smoking, we can even smell some characteristics on the surface of the BBQ, it becomes hard to distinguish during eating. Meathead makes this point repeatedly. He states he is a trained wine taster, he's got a great nose, with some exceptions like mesquite and hickory, it it difficult to differentiate. But yet, his preference is applewood. The biscuity aroma of post oak makes my backyard smell like heaven during smoking. A blind taste test is in order.

My short answer is no- however both have their merits... For me it's about tending the rig-it's therapeutic, Pellet is great for not wanting to have to pay attention and entertaining. You cannot duplicate the smoke that comes for wood combustion -IMO...

I've always been curious as to using nut shells (pecan, walnut, etc) to create better smoke flavor using a pellet grill, so thanks for doing this. It is interesting that basically a "waste" product (pecan shells) is so expensive at $33 for 20 pounds (where as even expensive Knotty Wood pellets are $24 for 20 lbs) Sounds like a lot of profit margin for Smokn' Pecan.

Just speculating but I assume it's because comparatively there's alot less shells on a tree in terms of volume than there is wood in it. And the process of harvesting shells is probably harder than throwing whole trees through a wood chipper haha.

This study, is a bit nerdy, but it states: "The increased production of pecan nuts generates a large amount of waste as a consequence of harvesting and industrial processing. Considering only pecan shells, it is estimated that approximately 420,000 tons are produced worldwide every year." The U.S. and Mexico makes up aprox 90% of the total production. @@SmokeTrailsBBQ These people are in the business of producing pecan meat for sale, not the shells. Kudos to them for figuring out something else to do with the byproduct, which is usually ground into a "sand blasting" media or landscape mulch. I can't tell you how many pounds of shells I have thrown away after shelling nuts from our backyard pecan trees.

I was thinking of doing that! I just don't have access to good pecan where I live. It would have been kiln dried, which wouldn't be great for a smoke flavor comparison.

I tried the pecan shell pellets and they are alright. The smoke flavor is there but in my opinion not anymore than your standard pellet. Not even close to charcoal or stick burner.

I like these pellets, but they aren't 3x better than other pellets despite being 3x the price IMO. If they worked on getting the price down to a more reasonable amount, I'd buy it more.

In the Midwest we say puh -kan rather than pee-kan. Short e rather than long e sound. You gradually came around to that pronunciation when you said it fast later in the video. Interesting product but I have no interest in the latest method of trying to come as close to the quality of an offset. I just use an offset 😉 I have a Kamado Joe also and I might try this. I don't get much smoke from them either.

100% correct. What is this desperate need to turn something into something it's not? Always searching for some click bait gimmick to replace actual effort as if there are hidden short cuts in BBQ. Just stop. Appreciate these different pits for what they are. They all produce great food but they are not equal.

Nothing wrong with progress and innovation. Those things do not in and of themselves make something obsolete. The implication of your thumb nail is that one method is the equivalent of another. I think that appreciating the strengths of the various pits is far more important than posturing that they are equivalent.

I totally agree with you, Steve. It seems some people are afraid that pellet smokers will one day replace offset smoking, a craft they've spent years perfecting. Guess what? Wood isn't changing. It will always be wood. Pellets, on the other hand, can evolve. I don't cook in kettles in the fireplace, nor use a wood stove. There are better AND easier ways to do so. One day, pellet smokers and pellets will evolve to the point they will equal, and perhaps surpass offset smokers. Never say never!!!
