Smoked Tomato Soup
Ingredients
4-5 Large Tomatoes
2 Tablespoons + 1 teaspoon extra virgin olive oil
1/2 cup (1 stick) butter
1 finely chopped yellow onion
2 carrots, peeled, finely chopped
6 cloves garlic, minced
1 bay leaf
1 TSP Granulated Onion
1 TSP Granulated Garlic
1 TSP dried thyme
1 TSP Celery Salt
1 TBSP Dried Oregano
1 TBSP Dried Basil
1 TSP MSG
4 cups chicken broth
Sea salt, white and black pepper to taste
2 teaspoons chopped basil
1 Can of peeled plum tomatoes (OPTIONAL)
1 Tube Tomato Paste (OPTIONAL)
1 TBSP White Sugar (OPTIONAL)
1 Cup Heavy Cream (OPTIONAL)
Instructions
Begin by quartering the tomatoes and smoking them, along with the garlic, at 350°F or 177°C for 30 minutes to 1 hour, ensuring a pleasing color. Once the tomatoes finish smoking, move on to melting butter in a Dutch oven. Add onions and cook for 3-4 minutes, stirring occasionally. Incorporate all other ingredients, excluding the chicken broth, and continue cooking for an additional 3-4 minutes.
Add in the smoked tomatoes, garlic, and the entire chicken stock. Bring the mixture to a boil, then let it simmer for 30 minutes. After simmering, remove from heat, discard the bay leaf, and blend the soup using either a handheld immersion blender or a regular household blender until it reaches a smooth consistency. Finally, season the soup to your taste with salt and pepper, culminating in a deliciously seasoned dish.
If the soup is too smoky you can add the optional ingredients.

The tomatoes were plenty sweet on their own. Using good tomatoes helped.
