Been doing these for thanksgiving for 4 years now. Brine the bird for 24 hrs for even juicier end result. They are so good that I now do 2 turkeys, just cuz it takes 4-6 hours so why not.

Must have missed it. What temp did you cook at? Saw you bumped it up at end... bit I didn't catch the beginning cook temp...

Cooked at 275, then bumped the temp to 350. You could start it at 300-325 and the turn up or down depending on how brown the skin is getting. Either way watch it carefully. Enjoy. Good Luck

What was your initial temp in the grill?

I started at 300, and then turned it up to about 350 to crisp. I mainly started at 300 because the meat was not totally room temp to start so wanted to warm it a little slower. If it was room temp to start, then initial temp prob would have been about 325

Correct, you don't have to but I always rinse it in the sink anyway and then clean the sink with soap and water

I'm kinda nervous, but everything else I've smoked since I got my smoker a few months ago has turned out okay, so I think I'll be good.
