Todd came home from his visit to the cabin with two huge King Salmon. We of course wanted to try some fresh - so we pan fried some as a sampler. The rest, we canned. Half was brined and canned plain, and the other half we brined and then smoked before canning. We too inspiration for the brines from @SimpleLivingAlaska We're super excited to have this on our pantry shelves this winter, and look forward to do this all over again next fall ♥

@@1870s Wow! Nice high limit. Definitely allows for enough to get your year's provision in a weekend at the cottage. Looking forward to seeing how the canned product turns out over time - if it tastes like lobster it's definitely worth the effort.

In the Caribbean we make a soup we call fish tea with the middle of the fish and the fish head. Boil the fish first cut the fish smell with a small teaspoon of vinegar. Then add in your favorite veggies it's a light soup but filling. We add carrots green onion white onions chayote, pumpkin and potatoes. Sooo good. Tfs your catch and the canning process

I grew up fishing and eating Lake Michigan. In Aug/Sept the women of the fisherman take their canners with them to the campgrounds. While the men are fishing the women are canning the fresh salmon. It was always cool. Some people had their little Jo Smokers. My Mom smoked some and then canned it, she also canned some with a red sauce and some with a spicey mustard. Delicious made into a salmon macaroni salad. Needless to say we ate well!

@1870s
@1870s 2 жыл бұрын
Chinook salmon are often called "kings," and not without reason. Strong, hard-running fish that will spool a reel without adequate line. Chinooks, the largest of the Pacific salmon, have been stocked in the Great Lakes since the 1870s, but it wasn't until Michigan planted them in 1967 that they became established. With a large alewife population in the Great Lakes, conditions were right for Chinooks to prosper. They have become the dominant species in the Great Lakes salmon fishery. Since then, a multi-billion dollar sportfishery developed, particularly on lakes Michigan and Huron. Although significant reproduction has been documented -- and in some places produces the bulk of the fishery -- the DNR maintains a large Chinook stocking program, though numbers have been cut in recent years because of concerns about alewife populations. The state record Chinook salmon weighed more than 46 pounds, but in excess of 20 pounds are considered to be fairly large specimens these days.
