First time I smoked ribs was this weekend. 3,2,1 used the butter on the second part of the cook but got to thinking. I watched several videos of you doing beef and using beef tallow. Being a southern family we have an old time coffee pot full of bacon grease wonder if that would work too. Going to try that next time unless you think it might not work.

I learned a lot in this video. Now let me say i do mine a little different but will add some of your tricks... I usually put my rub on on Thursday. let them soak till Saturday morning, but another coat of rub and then into the smoker.. And i dont wrap for the crutch. But that honey in the wrap sounds awesome... whats your opinion on foil verses butchers wrap?

We are real happy with the flavor now. Wife used the P I G rub on pork chops mixed with the Shake n Bake , then cooked in the microwave. They were great ! The SPG works well on eggs and bacon too ! I could eat a whole rack of those. Growing up in Central Texas we grilled/smoked meat every week, my Dad was very particular, if you served him anything with BBQ sauce on it he would not eat it, he assumed you burned the meat or somehow ruined the cook. I am not that bad, sometimes a little (very little) sauce is a good thing. I believe in this case you hit it right on the head
