Very nice. I trim the excess skin also, but fry it in a little oil in a fry pan, till crispy and crunchy. Great snack waiting on the main course.

Fry the excess skin in your favorite oil. Flavor the the skin with a little salt, garlic powder and black pepper and BOOM!, you got a delicious snack.

Wonderful looking turkey with a great how to. I have a couple of questions on this cook. Does the lemon thyme brine bath flavor come thru over just a normal SPG brine bath? Keeping the brine cold for a large item like a turkey is a problem as I don't have a ref that would take a 5 gal bucket. Have you seen or tried a cooler with the 5 gal bucket in it with ice in the cooler? I am impressed with how sharp your knifes are, how do you sharpen them? Hello Keith, the flavor of this brine is far greater than the traditional brine ingredients. Most people brine to keep the turkey moist but this brine makes the turkey juicy and with great flavor. You could definitely use ice, just make sure you keep the turkey cold. I haven't sharpened these knives yet but I plan on getting the Dalstrong stones soon. My knives need it now. Hello Dan, I would smokenthe turkey for 2 hours at 250° and then crank it up to 425° until you hit 165 on the breast and 170°ish on the thighs. Rotate the turkey every hour or so. Happy Thanksgiving.👍

You can but it's probably pre brined. I like using 1 gallon of water to half a cup of salt with a cup of herbs de provence. Let it brine for 1 day, rinse and season lightly.👍

@@SmokinJoesPitBBQ my pellet smoker is dead. Had a fire and it melted the wires. Was smoking a pork butt and the fire was coming from the back of the hopper. Pit boss still has yet to get back to me. So I went and got a budget smoker its not too bad but just want a crispy skin on a turkey.
