For those who don't have BBQ's You can make jerky in the oven, lowest setting with a wooden spoon to prop the door open. I use tooth picks to slide through one end of the meat and hang them on the oven shelving. Just line the bottom of the oven with foil to catch any residue drips.

Did jerky for the first time a couple of weeks ago. Super easy. Great tip about putting the slices in the marinade individually. I made the mistake of putting mine in all at the same time and some of the pieces didn't get any marinade on them.

Thank you Becka! We order our jerky from Kansas because all the stuff you get in retail stores has sugar for the first ingredient and you don’t really know what you’re getting. I like the idea of making it myself on the smoker. Gonna have to try this out. Thanks!

As always, great video! You can’t beat making your own jerky. It’s so wonderful to mix up the different marinades to get a variety of flavors at one time. Loved the “pro tip” of putting you meat in one piece at a time, so important for a successful outcome. My folks like it hot and sweet! Thanks Becca!

I don't really have any intention of buying a dehydrator right now, so I'm presuming that if I wanted to dig in for a long drying/smoking process, then I would just ad some pink salt to the marinade in order to keep things safe smoking at lower temps for hours and hours? I make my own summer sausage, and it usually takes 15-18 hours, so I'm not stranger to the long game in that regard.

I make my jerky on my Traeger and use a smokin' stick. I smoke for about 3 hours at 170 F and then finish off on the dehydrater. Results look similar to yours but temperature control is really easy on the Traeger.

Did you dehydrate it outside?. I've always done it inside. Thanks
@markcarr51422 жыл бұрын
I used to make beef jerky like this, then beef got to be too expensive. So now I make pork jerky from a tenderloin that HEB sells.... The big long one. I cut it in half, freeze it for an hour, so trimming off the fat is easier, marinade, smoke in my pellet grill, then finish off in my Excalibur dehydrator. It never lasts more than a week, and all my friends love it when I make it spicy as hell!!

@chucksanders71312 жыл бұрын
Everything I have seen from you has been 100% amazing. The only suggestion I would have on making jerky (the point of making jerky was long term storage without refrigeration) is to use a not well marbled piece of meat. The fat will spoil at about week 2 if its out of the fridge :( Now with that said, for the first week and 6 days, it will be the best jerky hands down on planet earth, or as you say, fan-tastick :)

Made your recipe this weekend and it was great. My wife doesn't care for the tough beef jerky and has been asking for a softer more tender jerky. Any suggestions on that?
@wolf-yw9wk2 жыл бұрын
more sugar less time will give u softer jerky. the sugar will help form a sort of "wall" around the meat creating some sort of balance so it doesn't dry out from the amount of salt pulling the moisture out while the air flows over.

When I was a kid my mom got a dehydrator and went crazy with it. Most of it turned out really well, but she tried dehydrating onions -- in the kitchen -- with the windows shut. Long story short, we spent a day or two in a hotel so the house could air out... Dehydrate wisely!

Love the tutorial, as usual! I have to ask, is the honey necessary? I HATE sweet jerky, which is why I never buy it. All commercial-made jerky seems to be sweet. I'd much rather leave the honey out unless it is imperceptible and balances the other ingredients. Please advise, anyone.
