Same here, and when I made it, I added the Cajun holy trinity, celery/bell pepper/ onion and also garlic for good measure. I wouldn’t have made this without seeing his video, so I am thankful for that. 🙂🙂

Yeah, dark brown roux gravy is to easy and so much better tasting then any packet mix. I was a bit shocked to see this guy using a gravy packet.

Its not hard to do it home made but I’m a fan of Brown gravy mix as of now because I’m tired of making it from scratch lol plus damn near use up all my seasonings trying to season homemade gravy

Honestly, thooough! Make the rue, and dont burn it. Brown gravy mix already has flavors that don’t go with what he wanted, then added more seasoning to it. 🤦♀️

Take the chicken out of the pan after cooking for an hour. Add 1-2 cups chicken broth to the chicken fonde at the bottom of the pan and scrape the flavor from the bottom of the pan. Add salt pepper, onion and garlic powder and let it boil for 5 minutes. Make a roux by melting 2 table spoons of butter in a pan and mix it with 2 tablespoons of flour in a separate pan. Move around on medium-low heat for a minute or two to cook the flour taste out. Make sure you scrape the bottom of the pan and stir every 15-30 seconds to make sure the roux doesn’t burn. Add a cup of the liquid to the roux and mix to thicken before adding that mixture back to the remaining liquid to prevent lumpy gravy. Mix and bring to a low boil until fully thickened to your desired thickness. Taste for flavor and add a little bit of chicken bouillon if it is to bland for your taste. I would suggest you buy premium better than bouillon as I find it to be the best bouillon paste. Enjoy your homemade chicken gravy.

Your one of the only cooking channels I subscribe to. It always looks awesome. I was always curious about Cajun flavor bases so thanks for sharing... It leaves me w so many questions. How are you so skinny? Do your culinary traditions come from Acadians? The french can cook but you guys have your own thing. I really wanna know what Cajun BBQ looks like! I'm from Ontario and there's still a few Acadian communities. I hear most were run south by the British. I figure southerners heard "he's Acadian," then it became "a-cajun." On the east coast they had those colorful houses so they could see home at sea. I see pics of them down south too.
