I just watched your video today, so I ended up making it for dinner. I didn't have chicken thighs, so I just use chicken legs and I added mushrooms. We had rice and string beans on the side. It was real country in my house for dinner 🙌🏾

There used to be a mom- and pop-owned restaurant in my San Francico neighborhood that specialized in Southern cooking. For $14, you could get two pork chops, two fried eggs, grits, collards and hash browns all smothered in gravy. Delicious and enough to keep hunger away for the rest of the day! I couldn't have afforded to attend college if it weren't for this cheap and filling breakfast.

If your gravy is little runny make a slurry. Add a teaspoon of flour or 2 to cold water and stir. Then slowly add your slurry to your gravy to thicken it up

My family is from the south. Never have and never will use broth. It's the "crumbs" baby. Add that grease to those crumbs, onions, all purpose flour. (brown it). Then cold water, cook it down. Strain, simmer and add salt pepper season all and garlic powder. That's it That's all. Best ever.

That is perfectly cooked smoothered chicken and gravy. Reminds me of my dad and how he would cook deer steaks with homemade gravy after marinating the deer in a coke overnight or in beer. Looks perfect, and I love making gravy. I think I may have emersion blended it right before putting the chicken back in to have all the onion flavor without the chunks, just for texture, but either way. I also like getting whole chickens and deboning them to use to make a stock. Cheaper and better. And maybe a small bit of thyme. But that's got me hungry. Sad I already decided to make pizza today.

That looks delicious AB. I make a dish similar to this using chili powder in the gravy making it red and I serve it over mexican rice. We call it red chicken. Its been a staple in my family for generations.

@@michaeltolivar4646 I did his seasoning but I always add a bit more seasoning because I always think things are too bland as a general rule. In his suggestions below the recipe he said you can sub in smoked paprika and I did put in more of the same seasonings. I guess when I said I did it as written I didn't take into account measurements, just the season s themselves. The gravy is the right consistency and flavor is up there. I think I might use mushrooms next time but it isn't necessary really.
