I made that cookie recipe and they were great. My general rules are to measure vanilla with your heart and leave just enough dough to hold the chips together. I also watched one of the grain ladies and she talked about freshly milled flour taking longer to absorb moisture. So chilling would serve two purposes, cooling the butter and absorbing moisture.

If a recipe calls for a specific amount of flour in grams, weigh out the wheat berries in that amount of grams, mill the berries then you don’t have to weigh out the flour after it’s milled because it will be the same as what you weighed out before milling. Much easier for me. Weigh once and go. Cookies spread because of the butter. I make my cookies just a bit smaller

I’ll try weighing the berries out next time to see if it makes a difference in what I’m making. There are many things that can affect the way cookies spread.
