I’m pretty sure that it works with all water logged blocks because it’s technically not water but not lily pads cause there one block above but I’m kinda confused about the slabs

Slabs stop the water from freezing as a block is above them, you could technically use glass blocks (more expensive though) too instead of slabs for a better look.

if your doing like raid farms in snow and need your water source covered i just went really far up and used leaf blocks on the lines of where the actual water source blocks were so the big pig things didn’t break the leafs and making ice freeze hopefully it helps someone😭😭 i found ts after the struggle of hating myself of building in the snow for all farms

Unfortunately yes, unless you have a bee farm they will pollinate your crops and they grow very fast.

can i use leaves instead of roots ?

They don't stop the water from freezing unfortunately while roots do.
