The English may have invented the custard slice, but we made it OH SO GOOD. Silky and thick custard, sandwiched between layers of biscuit and passionfruit pulp, dessert doesn’t get any better.
Ingredients
1x 200g packet Cream Crackers
200g So Good Instant Custard Powder (1 Packet)
600ml Milk
1 cup Icing Sugar
1tin Passionfruit.
Method
1. Grease a 3cm-deep, 16.5cm x 26cm (base) slab pan. Line base and sides with baking paper, allowing a 2cm overhang at both long ends. Place 12 biscuits, in a single layer, in pan to cover base.
2. Combine custard powder, water and milk in a Bowl. Whisk until smooth and there is no lumps.
3. Pour custard over biscuits. Top with another layer of 12 biscuits. Refrigerate for 1 hour or until set.
4. Sift icing sugar into a bowl. Add passionfruit pulp. Stir to make a thick icing. Spoon icing over slice. Refrigerate for 1 hour or until icing sets. Cut slice into squares, using shape of biscuits as a guide. Serve.
