If you wish to use whole wheat flour, I recommend making Irish style soda bread instead. Darina Allen has an excellent video on KZbin to demonstrate how.

James Stray Irish soda bread has no egg or baking powder. It has baking soda /bicarbonate soda. I use wholemeal flour also and no problem

Lol! My husband is a Mexican man, and it is also very difficult for him to have dinner without bread.🤷‍♀️ I'm American of English extraction, and I do dinner just fine without bread, except if it's fresh from the oven, then there's no way I can resist anytime. Thank you, Jacques. This recipe looks like another real winner!! I'll be trying thissoonerr than later.😘❤️

My 78 year old father was raised to have bread with every meal and went for Chinese for the first time in his 30’s and asked for bread.

Simple and great. As someone with French heritage too......Bread is a must have in meals. A quick and simple Soda Bread....absolutely yummy. The best part was hearing jacques say his oldest motto "Happy Cooking!" That made my day along with the video!

Great little quick recipe. I am French and Italian. The words "I find it difficult to eat dinner without bread" is something you can't understand unless you're this culture.

I like how humble he is. He never introduces himself as Chef Jacques Pepin. I watched more of these videos - and he does use Chef. Still a humble guy though.

@@fun_ghoul Which is why it's even more annoying. If someone has done the time in a commercial kitchen, and has the requisite knowledge and skills, I have less of a problem calling them "chef" (if their ego requires it) than I do calling a doctor of English "doctor", to use your example.

@@TheVetusMores I know I'm a bit late to comment, but the medical profession stole the title of doctor from the PhDs and not vice versa. I still think that it is not needed to insist on being called doctor except for in formal settings when it might be appropriate

This is a recipe I always associate with Ireland and my grandmother making her own soda bread. Delicious with lots of butter.

i don't mean to answer for Jacques, but...use whatever is available, cheap and good. Squash, celery, carrot, broccoli and cauliflower all make excellent puréed soups, which also all freeze quite well! Oh, did you already catch his tip about freezing veg scraps for stock? A good stock is the basis for a good soup. Outer onion layers, carrot ends and peel, celery ends, etc. He uses milk cartons, i use large yogurt containers. Whatev. P.S. As it happens, I'm a '79 model as well. Cheers

As an 'aside', Soda Bread is a traditionally Irish 'quick bread'. Baked every day in a traditional Irish home 👍

T'en à besoin d'un four grille-pain, Jacques. Même les moins dispendieux vieux modèles de Black and Decker (Toaat-R-Oven) se chauffent en 5 minutes! That's what i use for biscuits and scones...works a treat!

I bake soda bread at least once a month. I prefer to make it sweet, so I put sugar, raisins and vanilla extract.

As I know baking powder is kinda universal, baking soda activates in sour environment - there's need of some butermilk or sth like that, so maybe because of using just milk in the recipe Mr. Pepin uses baking powder instead of baking soda?

Baking powder is soda+an acid (cream of tartar, monocalcium phosphate or both if "double action"), plus corn starch to keep the acid and alkali from reacting. There's also self-rising flour, especially in the UK, which comes with those pre-blended into the flour; you just add your liquid and you're done. Note that you could also still use buttermilk in conjunction with the other acids.

Interesting. No acidity to help activate the rise, so it's meant to be a more hard firm bread.

This is the first recipe I've seen from this great chef that hasn't come out properly. The dough was far too wet which was probably why the bread looked too solid. Irish soda bread doesn't have egg and uses baking soda not baking powder. Plus better to use buttermilk or even milk that's slightly on the turn to react with the baking soda.

His had no rise atall because he used milk,, you use buttermilk to activate the bicarb and it will rise when cooking..

I'm guessing these are his shows now. Put three or four episodes together and you have a half hour show. I doubt he'd do a regular show due to his age.

That bread appears to be rock hard. I prefer Irish soda bread, which uses buttermilk, has more of a raise, and is lighter.

It hurts my heart, but Chef Jacques is simply WRONG. The Irish do not add eggs, sweet milk (butter milk only) and no kneading..It's a quick bread. MORE RESEARCH NEEDED, CHEF JAQUES!

Soda Bread is one of a thousand different types of bread you can make, and very common in Ireland. It's kinda like a cracker/cookie, and is good dunked in coffee, soup and commonly in **beer**. If you don't like this style, don't make it. If it's all you've got, it's better than starving.
