I followed the recipe with same measurements and skipped milk powder, baked in a bread mould, the texture and taste came out perfect. The only problem was with shaping the buns as the dough was not holding shape and I had to use a lot of dry flour to make buns. I feel the buttermilk quantity should have been reduced. But I'm happy that I could bake a whole wheat bread with a great airy and light texture. Thank you for the recipe♥️

You can easily make buttermilk at home.. take the same quantity of warm milk and add 1 tsp vinegar. Let it sit for a while and your buttermilk is ready or you can use plain milk instead

Are you talking about this recipe?? If yes then definitely you should get colour because of the excess milk based products used in this recipe.. if you are still not getting the colouration then definitely there is some problem with your oven settings.. you must think of getting it checked once

Hello mam, I used exact amount of ingredients by weight measurements. But my dough was too sticky after first proofing making difficult for shaping the buns. Any suggestions mam. As mentioned you can grease your hands well before you are about to touch the dough and if you note I have made use of bench scraper for shaping as well.. so you do the same.. these two tips should be useful ♥️ so good to hear about your attempt.. glad to know you liked them.. thank you.. 🤩

We use mill ground wheat flour ...that is very strong ...I have utterly failed with 100% atta ..all the time ,even after kneading in stand mixer for 10 min.. dough is smooth but the outcome after 1hr of first proofing..the dough has a cracked surface..with no gluten structure at all...I don't understand what is going wrong

She has said we should not knead atta for longtime as it would break the gluten the mistake which I was doing.

We should never add salt while activating yeast because salt stops the fermentation of yeast

True for active dry yeast.. but since I am using instant yeast which doesnt require any kind of activation have added all the ingredients together. And if you note the salt and yeast are not in direct contact so it's perfectly fine..
